Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bag in box at Beer,Shop Folkestone hazy pale gold colour no head. Lots of perry character. Film developer flavour. Some sourness. Decent. Hides abv well. Good character though. Dry on the finish. Some pear flesh flavour.

750ml wired cork bottle from Fine Cider Co. Opened with a pop. Hazed orangey golden colour, short-lived white foam head and aroma of apple, fruit, leather, funk. Taste is sweetish, appley, fruity, orchardy, citric, with barnyard, leathery funk and earthy drying bittersweet tannins. Medium bodied, light soft carbonation, dry funky tannic finish. Very drinkable.

Pale golden yellow topped with a thin white cap that veers to the edge.
Nose is funky, light sulphuric tones, tannins, apple core.
Taste comprises sharp apple, straw, herb, farmyard nip, light acidity.
Medium bodied, fine carbonation, drying close.
Tidy as always from Olivers although the nose was a little off putting.

Nose is stewed fruits, vinous, rum barrel, caramelised apples, spice.
Taste comprises stewed apple, caramel, booze tunes, herb, spice, rum barrel.
Full bodied and some, fine carbonation, drying close with a big kick in the bollocks boost.
Solid sipper ... desert wine like.

Very nice stuff. Quite dry. Mellow ripe apple. Rounded and deep woody character, doesn’t scream American oak to me, just generally quite dry and woody. Musty cellar. A little warmth to finish. Subtle warmth - drinks below the ABV. Some bitter peel. Good one overall.

330ml bottle from Cat in the Glass. Bright coppery tinged golden colour, white foam head that quickly dissipates to a thin rim and aroma of ripe apple, caramel, earthy funk. Taste is sweetish, appley, fruity, caramel, farmhouse funk, leathery, orchard floor, oak, wood barrel, with some dry tannin. Medium bodied, light carbonation, medium drying funky fruity soft tannic finish. Nicely drinkable.

Bottle at home picked up from HOTM probably. A light hazed golden orange coloured pour with a lasting loose white head. Aroma is dry earthy apple, bark. mellow funk, spicy, prickly notes. Flavour is composed of dry apple, earthy funk, twist of lemon, funk, bark, pithy drying finish. Palate is super tart, prickly, drying tannin, fine carbonation. Crisp and refreshing and decent complexity.

Panda thanks to Danlo: Poured an unclear white golden with a white head. Aroma is pear, herbal, underlying sugars. Taste is pear, graham cracker, tannins, carbonation, very dry finish.

750 ml bottle sourced from Darts Farm. Pours clear dark orange gold with minimal head. Aroma: caramel apple, vanilla, oak, whisky barrel. Taste: moderate sweet and bitter, mildly tart. More, caramel, oak, whisky barrel. Very dry on the palate. Medium body with light carbonation. Nice.

500ml bottle from Fine Cider Co. Rich reddish-orange dark amber brown colour, no head and aroma of apple, sherry, wood, booze. Taste is sweetish & tangy, warm boozy, appley, juicy note, and brown sugar, dried fruity, woody, rum barrel, nutty, spice, earth, with some drying tannin. Full bodied, low carbonation, dry earthy boozy tannic finish. Very sippable.
