Description
Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

18/11/2025. Bottle shared by danlo, cheers Ed! Clear pale pour. Aroma is sweet pear, caramel, flowery, my Nan’s sugar vinegar, light hopped edge. Fairly sweet, slightly tart with a drying edge. Interesting.

2024 vintage from Appellation Wines.
Appearance - deep amber with steady but gentle carbonation.
Nose - soft bruised and baked apple. Some straw.
Taste - juicy apple tart, then fresh tart apple.
Palate - light to medium bodied, nice tangy, long finish.
Overall - good.

Can at 1280. Clear golden, small head. Crisp apple, a touch of funk, medium tannic, zesty. Under medium seeet, light aour and bitter. Crisp body, over medium dry. Nice.

750ml bottle from Fine Cider Co. Sparkling, golden colour, white foam head that dissipates away and aroma of juicy apple flesh, sharp funk. Taste is tangy, tart, fruity, appley, fleshy, and loamy, funky, wood with drying bittersharp tannins. Medium bodied, medium carbonation, dry fruity tannic finish. Nicely drinkable.

Bottle pour at London Cider House. Pours clear deep gold with no head. Musty wool, wood, and dry apple skins on the nose. Flavour is bone dry with tons of tannins, great woody barrel character. No carbonation and very dry on the palate. Not always a fan of still ciders, but this is great.

750ml bottle from Fram Ferment. Orange golden colour, thin foamy white head and aroma of apple, caramel, peach, funk. Taste is sweet, appley, caramel, stone fruity, orchardy, funky, with balanced acidity and tannin. Medium bodied, light carbonation, lingering peachy sweet & drying tannic finish. Nicely drinkable.
