Description
Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Poured from 750mL bottle. Hazed gold with minimal white head. Smoked, dry-ish apple, some feint manure notes, quite nice.

750mL bottle, pours a hazy golden orange with a small white head. Aroma has some smokiness to it, crisp apple skins, and a touch of farmhouse notes. Flavour has plenty of smoke, great farmhouse notes, crisp apple skins, and some mustiness. Great smokiness, close to bone dry, fantastic farmhouse complexity. Excellent.

Pale amber, and hazy. There's a nice apple complexity to this, along with honey notes. Smells earthy, smokey, pedio. Drinks dry, smokey, feels like a bit of sugar. Not a lot of pedio, just a touch, but that smoke and complexity is great.

750mL bottle. Pours hazy dull gold. Musty apple skins, manure, and a kind of smoky character on the nose. Flavour has lots of musty manure, smoky straw, bone dry finish. Fantastic complexity, and the smokiness is lovely. Excellent cider.

750ml bottle from Fine Cider Co. for #rgpm. Sparkling, bronzey golden colour, short-lived white foamy head that dissipates to a thin rim and aroma of rich perry pear, fruit, caramel, vanilla, funk. Taste is sweet, ripe & juicy perry pear, fleshy fruity, alittle core, with caramel, leathery funk, woody, orchardy, some zingy citrusy acidity and drying tannin. Medium bodied, spritzy carbonation, lingering sweet & drying peary finish. Nicely drinkable.

Great stuff. Impressive in its balance, elegance and simplicity. Not overly showy in any respect but it has nice softly sweet pear, low funk, mild boozy kick, a little cobweb dryness, low acidity. Soft pale wood, a vanilla accent. No signs of age, really. Superb stuff. Massively drinkable. Dangerously so.

Appearance - pale golden yellow with gentle carbonation.
Nose - dry apple and sweet pear.
Taste - more of the same.
Palate - medium bodied, sweet fruit with light fruit tannins and cleansing acidity.
Overall - nice.

Incredible! A perry made in autumn 2001, aged for a winter in whiskey barrels, and then bottled the next spring with a secondary fermentation. Then left in a barn for a couple decades. Such a beautiful musty pear expression, and brilliant whiskey subtlety

Pale yellow to light golden topped with a white cap that thins to a swirl.
Nose is ripe pear, straw, herb, tannins.
Taste comprises pears, hay bale, sugars, tannins, straw, faint acidity.
Medium bodied, fine carbonation, light drying close.

Moderately hazed golden blonde topped with a thin white cap, some floaters on offer.
Nose is sharp pear, grass, herb, farmyard nip.
Taste comprises bitter sweet pear, herb, hedgerow, tannins.
Medium bodied, fine carbonation, drying close.
Decent enough perry.
