Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bag-in-a-box at Ealing Beer Fest 25. Aroma has a hint of sweetness alongside the astringent pulp and peel. Slightly opaque amber. Thin frothy foamy translucent white head primarily sticks to the rim. Flavourwise it is then very surprisingly sweet and syrupy. Medium bodied. Oily. Soft carbonation. Long dry slightly astringent finish.

Golden copper with an off white cap that soon thins.
Nose is bitter sweet apple, freshly cut grass, herb, straw, hedgerow.
Taste comprises apple core, straw, tannins, orchard floor, grains, light funk.
Medium bodied, moderate carbonation, drying close.
Solid well balanced cider.

Pale lightly hazed yellow lemon squash kind of a looker.
Nose is grass, funk, sharp apple, straw.
Taste comprises tangy apples, orchard floor, herb, straw.
Medium bodied, moderate carbonation, drying close.
Not bad but not up to the usual Oliver's standards.

Panda from danlo, thanks Ed. Pours just off clear orange gold with dissipating white bubbles. Aroma: apple, caramel, straw, funk. Taste: medium-ish, tangy apple, apple core, caramel, light tart, funky, low to mid tannins. Medium body with soft carbonation. Lovely stuff.

75cl bottle from Appellation Wines.
Appearance - hazy golden yellow. Very gently carbonation despite a good pop on opening.
Nose - apple, apple skin, hay and a touch of wood.
Taste - juicier apple this time, still skin and wood in there too!
Palate - light bodied, tangy, bitter and good acidity.
Overall - lovely gear!

Bottle. Clear pale gold. No head bar a few bubbles. Nose has like an orange wine character. Which makes sense. Funk. Oak. Semi sweet red wine. Stinky tannic apple. Taste is dry tannic with some stewed apple sweetness. Not entirely still, which is fine by me. Good depth. Tannins and oak to finish. It’s class no doubt but I like my bevs fizzy.

Clear golden with a fast collapsing white head.
Nose is bitter apple skins, funk, dungy twang, farmyard.
Taste comprises apple skins, tarte orchard fruit, light funk, barnyard tones.
Medium bodied, fine carbonation, drying close.
Solid stuff.
