Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bottle 750ml. clear glass.
Clear sparkling, light to light medium yellow colour with a small, fizzy, fair lacing, mostly diminishing, white head. Aroma is moderate to light heavy pear, wood, light to moderate celery. Flavour is moderate sweet and light light acidic with a average duration, pear, sweet pear, wood notes. Body is medium, texture is oily to watery, carbonation is soft. [20120811]

Polycask @ NWAF 2012, National Winter Ales Festival, The Venue, Sheridan Suite, Manchester, England.Light light unclear light to medium yellow color with virtually no head. Aroma is moderate to light heavy apple, tart apples, barnyard. Flavor is moderate to heavy sweet and light to moderate acidic with a average to long duration. Body is medium, texture is oily, carbonation is flat. [20120119]

Bottle 750ml.Clear medium orange yellow colour with a small to average, initial sparking and fizzy, virtauly none lacing, fully diminishing, white head. Aroma is moderate apple, hay, chicken manure - barnyard. Flavour is moderate to light light heavy sweet and light acidic with a average to long duration, dry dry, farmyard, apple. Body is light to medium, texture is watery, carbonation is soft - fizzy. [20120401]

Bottle 75 cl. Courtesy of fonefan. Pours a hazy golden with a tiny off-white head. Tart, leathery apple aroma. Light body, very dry, slightly fusty, funky and very astringent with heavy tannins. Very much a classic British farmhouse cider. 010412

75 cL bottle. Pours cloudy yellow with a small white head. Aroma is dry apple citric. Leathery and bretty, citric apples. Dry and bretty finish.

Bottle @ FOneFan, 5.4%. Slightly hazy deep golden with medium fully diminishing white head. Aroma is apples, tart and a little barnyard. Flavour is apples, very dry, little sweet, tart, little barnyard and a little citric.

Polycask at NWAF, Manchester in company of Dad, Pauline and Baz 20.01.12 Pours hazy gold with a light aroma of wet fields. Quite sweet but not overly so, lacks a real depth of flavour, but decent appley flavours, no real crispness. Good cider. A6 A3 T7 P4 Ov13 3.3

Flavour is moderate sweet with a long duration, apples, thin. Body is medium, texture is oily to watery, carbonation is flat. [20111021]
