Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Polycask at Merton Winter Beer Festival, 05-02-10 Pours silvery gold with a nice fresh tingly pear aroma. Taste is clean, refreshing and crisp. nicely tangy bur there is a decent juiciness. Good stuff. A6 A4 F8 P4 Ov12 3.4

Cask@GBBF 2009 ... (medium perry)very pale yellow ... dry fruit ... light pear nose ... sweet pear ... bit thin.

More homebrew, less suspect, clear bottle imports Paul. :P No one really fought for any ciders/perrys that night, but just seeing this stuff for the first time locally a week before at the quite overpriced Bierkraft, I wasn’t going to miss it now. BCTC09. A hearty, selfish pour into my baby Duvel glass. Filtered, faintly golden, diluted yellow still pour. Smell is of wood pulp, grass, soft pear & sharper white grape juice. No must, very clean. Actual taste was a letdown. Just a little watered down apple juice & sweeter pear skins to start, but from there, & a whole lot of wood, yeast, & mulch. A touch buttery. So very dry, the finish delivered nothing. Overall, it barely showed. I revisited the bottle Sunday morning, but found its neighbors much more hospitable. Sad panda. :(

Bottle. Pours with a clear, still golden body with very light alcohol legs. Aroma of sweet apples, oak tannins, cork, must and a sort of spicy, celery like quality. Taste is dry, oaky and earthy with some tannins. Sort of a bitter pith astringency as well. Still body. I liked the perry better.

Bottle. I actually enjoyed this one quite a bit. 750 corked wine bottle. Pours still and a clear yellow. Aroma of light oak, sweet pear, light tannins, caramel and just a hint of something funky. Body is still and dry, with delicate, light sweet pear notes, and very slight oak tannins (the bottle says 8 months of oak aging..really? must have been some very worn out barrels). Medium to light body and still. Very drinkable. As a homebrewer and cider maker I find it interesting that they chose to leave this still, and not carbonation. It is refreshing but probably would have benefited from some added bubbles. Very understated overall, but enjoyable.

Bottle picked up from Olivers, Herefordshire Jan’ 09 Pours a wonderful clear warm golden colour. The aroma is really woody but their is a slight sandalwood incense stick tinge about this that softens the appleyness in its tracks. The taste is initially soft but then a really quite dry appleyness shines through with that oak woodiness leaving its mark, its strange the oakiness intially draws you away from the dryness but then you feel the gums and you realise that they’ve had a workout. Its another very nice Cider from Olivers that has been produced for the American market and even has the Shelton Brothers label, I can see me stocking up for the summer but as nice as it is its not my favourite. From a plastic barrel Battersea BF 09. Hazy green gold, no head. Film developer on aroma. That’s alright. Soft carbonation in mouth, reasonably sweet in mouth with a medium dry finish. Certainly quite a lot of cider influence. Some acidity. Decent. Decent fruity aroma.

Cask, gravity at Merton Winter Beer Festival 6th and 7th Feb 2009 Pours a light gold with slight haze. Nice crisp appley aroma, some apple skin. Simple and tasty, good fruity and juicy apple taste. We had this down as dry in the programme but I’m quite sure that Tom Oliver said it was med/dry, good cider. A7 A4 F7 P3 OV13 3.4

Bottle picked up from Olivers, Ocle Pychard, Herefordshire, consumed 01-02-09 Pours straw coloured with the merest hint of haze, some lees settling on the bottom of the glass. The aroma is slightly sharpish of juicy pear flesh. There is a big up front juiciness in the mouth and whilst initially I thought that this was sweeter than I was expecting it does actually leave plenty of tannins around the gums and on the enamel of the teeth. This is very nice now but in the summer it would be sublime, it tastes far stronger than the 5.9% stated. A7 A3 F7 P4 OV14 3.5

From the barrel at Olivers stall at Bristol Slow Food Market, November 2008. Deep, slightly hazy gold with moderate carbonation. Yeasty, dry apple aroma with some spiciness. Flavour was initially of sweet apple juice, with some cinnamon, before a satisfyingly tart finish. Drinkable.
