But luckily that wasn't the end of the story for this historic brewery. In 2018, Erik De Keersmaeker decided to focus on his passion after a number of other challenges. As the fifth generation of a brewery family from Kobbegem, De Keersmaeker brings the Eylenbosch brewery and its iconic beer back to life. He does this together with the young brewer Klaas Vanderpoorten and study friend Jeroen Lettens. The new Eylenbosch Brewery is dedicated to tradition and authenticity, and will brew its lambic using the traditional method and recipes.

Kolor jasno żółty, złoty, klarowny. Piana biała, drobno pęcherzykowa, niesamowicie wysoka i trwała, jak na ten typ piwa. Delikatnie "maluje" na szkle.
Aromat silnie owocowy, dziki, funky, kwaśny, są tu nuty trawiaste, jest mokre drewno, zapachy wsi. Aromat jest przyjemnie orzeźwiający.
Smak intensywnie kwaśny, z niewielką słodyczą w tle i mocniejszą, pestkową goryczką. Goryczka wydaje się być sucha, lekko szorstka.
Wysycenie średnie w górę. Tekstura niemal gładka. Ciało średnie. Posmak długi kwaśny i goryczkowy. Z czasem, kwaśność słabnie kosztem pestkowej goryczki.

Golden with a white head - Malt aroma - Malt body with some belgina yeast flavours - Malt and yeast flavours goes into the finish - This was nice
Superficial sample from Billie’s craft beer fest 2025. Unclear pink under a huge pink head. Acidic cherry aroma. Taste is sour cherry, lemon, funk and hint of vanille. Pretty sour stuff.

Kolor pomarańczowy z delikatną mgiełką. Piana biała, zbudowana z drobnych i średniej wielkości pęcherzyków, jest wysoka i dosyć trwała.
Aromat kwaśny, dziki, intensywnie owocowy (głównie niedojrzałe owoce), beczka a właściwie mokre, surowe drewno.
Smak przyjemnie kwaśny, może nawet cierpki, orzeźwiający, z goryczkowym, pestkowym finiszem.
Wysycenie średnie w górę. Tekstura odrobinę szorstka. Ciało średnie. Posmak długi kwaśny z towarzyszącą goryczką o charakterze mokrego drewna, pestek owocowych.

Blend of (the revived) Eylenbosch cherry lambic with Alvinne's Chain Reaction, a blonde sour making use of raw wheat in an attempt at emulating lambic, but also flavoured with fig leaf; this is a collab I never saw coming, I must admit, but apparently it arose when both Alvinne and Eylenbosch were invited together for a tap takeover at Internationella Pressklubben, the famed Swedish beer restaurant. From those kegged origins back in April, the blend has meanwhile been bottled in 37.5 cl 'geuze bottles' with cork and muselet - luckily. Medium thick, fizzing, irregularly moussey, pale pink-white head dissolving quickly in the middle but retaining at the edges; cloudy fuchsia red robe with rosy tinge, the colour of a strawberry daiquiri, but more tilted towards burgundy. Strong and distinct bouquet of rich cherry jam and reduced sour cherry juice, slight cherry vinegar, sour yoghurt, old leather, wet oak wood, damp earth, stewed rhubarb, almond from the cherry stones, cherry skins, rosé wine gone sour, dark green forest weeds, indeed whiffs of both coconut and cinnamon as announced (but even then I was not actually expecting them) but also cesspool as more of the bottle goes into the glass (slowly retreating again after that, fortunately). Sharp onset from both puckering cherry tartness and spritzy carbon dioxide, lemony streaks for sure but no real 'vinegar' effect, just an aromatic touch of cherry vinegar perhaps; unripe green plum and hard green apple notes as well. Lots of sour cherry fleshiness along with astringent cherry skin tannins, piercing through a soft bready wheatiness and yoghurty lactic sourness throughout, adding layers of wood, earthiness and cherry stone tannins in the end, while a full-bodied red wine aspect lingers in the background. Retronasally, the fig leaf that went into the Alvinne part of this blend does push through as a slight exotic accent, but far less reminiscent of cinnamon and coconut retronasally than orthonasally. Drying, tart, long, tannic, almondy and lemony finish - but also filled with this 'rosy' cherry fleshiness and juiciness, also contributing to a flavour profile which generally feels a bit more intense than average for a cherry lambic. Alvinne fans will probably not be disappointed here - I am less certain about the Eylenbosch fans which are probably a tad more traditionally oriented, but this is in any case a very colourful, tangy and distinct fruit sour, recommended at least for the true sour beer aficionado.

Pours clear , darker blonde/amber. Small, yet stable white head. Scent is quite powerfull, from a distance, mature and oaky, funky (brett) lambic. Up close, the character seems very 'full' and deep. Taste is Surprisingly harsh in it's dryness, astrigent. Way less full than expected. Oaky, but also less dominant on oak (and age) as the aroma seemingly promissed. Very straight up, acidic, but fairly blank. And, as mentionned, astrigent. This is pretty underwhelming!

Hazy burgundy colour, mid sized head. Tart funky cherry aroma. Tart with medium body rounded mouthfeel. Tart cherries, deep vinegar. Low bitterness.

Bottle 33 cl. Pours a cloudy, orangey golden with a lacing, off-white head. Very spicy, fruity nose. Medium body, a sweet fruitiness, yeasty with quite some phenols (not to an unpleasant degree though) and a decent, finishing hoppiness. 011025

A hazy bright pinkish red beer with a white lacing. Aroma of lactic red fruits, berries, grapes. Taste of sour red berries, red grapes, funk, vineous finish.
