Bierbrouwerij De Pauw is not a modern beer factory full of measuring and control technology, but an old-fashioned brewery. The only tools are a watch, thermometer and scales. All Pauw beers are top-fermented, unfiltered, unpasteurised and with secondary fermentation in the bottle. We brew various types of special beer in an artisanal way, mostly according to Belgian recipes.

33 cL bottle. Pours hazy dark brown with a small off-white head. Aroma is fruity, mild acidic and spiced. Fruity, mild acidic and yeasty. Citric and bitter, lingering fruity. Dry spiced finished.

30 cL bottle. Pours hazy orange with a diminished off-white head. Spiced aroma of annis seed - solid liqourice. Dry and spiced flavour with a solid liqourice and mild acidic to dry/roasted malt note. A bit too much on the spices, but not unpleasant.

Bottled. A hazy dark golden beer with a thin lazing off-white head. The aroma has notes of yeast and fruit as well as a bit of malt. The flavor is very sweet with strong notes of malt as well as lighter notes of yeast, honey, and fruit, leading to a dry spicy finish.

bottle, donated by Bierkoning. Golden colour, mid-sized off-white head. Malty and slightly hoppy. The honey is in the far background, hard to detect. Nevertheless a nice beer.

bottle, kindly delivered by Bierkoning. Hazy pale yellow, no head, lots of floaties. Typical witbier aroma. Mild, pleasantly fruity with a spicy touch of clove and coriander. Nice citrusy fruitiness.

Hazy amber with a medium off white head. Sweet aroma with toasted malt, caramel and nuts. Flavour was sweet with roasted malt, caramel and nutty notes. Finished sweet.

Bottled. A hazy amber beer with an orangey head. The aroma has notes of malt and caramel as well as a light note of butter. The flavor is sweet with notes of malt and caramel, leading to a dry strawy finish. The body is a bit light.
