Bierbrouwerij De Pauw is not a modern beer factory full of measuring and control technology, but an old-fashioned brewery. The only tools are a watch, thermometer and scales. All Pauw beers are top-fermented, unfiltered, unpasteurised and with secondary fermentation in the bottle. We brew various types of special beer in an artisanal way, mostly according to Belgian recipes.

Amber colour, medium off-whte head. Aroma of laurel and licorice. Flavour has clove, laurel, and sweet malts.

Bottled. Cloudy pale yellow color, short head. Aroma of some honey, bit dusty, pale malt, grain. Bit bitter taste, sweet, hint of honey. Honey is very weak, and that’s for the better, cause usually it’s quite overdone. Decent brew.

Courtesy of bierkoning, thanks Edo! Hazy nutty brown color, small brownish head. Very grainy, yeasty aroma with notes of toffee. Very caramelly, yeasty, sweet malty beer. Not really a bock, more like dubbel with toffee and spelt, which adds some grainy notes.

Bottled. Deep hazy brownish amber colour with mediumsized off white head. Aroma is sweet malts, fudge, some yeast and mild notes of alcohol. Flavour is fudge, very bready, some yeast as well as some fruityness lurking. Aftertaste is quite fruity and caramellish/toffeeish which then turns into a bit sour wooden. Quite interesting.

Courtesy of bierkoning, ty Edo! Hazy pale yellow, small white head. Citrusy fruity aroma with hints of coriander, no honey found. Fizzy carbonation. Medium-bodied. Citrusy flavor, refreshing. It has some honey in the flavor, but it is not dominating at all. Not complex, but pretty ok.

Bottled. Golden colour, mediumsized white head, which disappears quite fast. Aroma is fruity, earthy and some mild rubberyness. Flavour is honey, citrus, some breadyness and grassy hops also. Honey and hoppy bitterness in the aftertaste. Quite nice.

Very different than earlier ratings here: refreshing witbier with fruity orange-peel and herbal coriander flavors. There is maybe a bit too much coriander - making mouthfeel kind of plastic. Although good summer drink.

Bottled. Hazy yellow colour, small white head. Aroma is sweet and fresh citrusfruits, very zesty, along with wheat and some mild spicing. Flavour is very much the same, with the spicing coming in quite strongly. Almost being peppery. Some slight notes of sourness too. Very refreshing and pleasant. Not at all like the other ratings of this beer.... have they gotten their "issues" sorted out?

Bottle, 5%. BB November 06, 9 months ago. Bad plastic aroma. Cloudy orange colour, sparkling. Frothy, very unstable white head. Plastic flavour with a sour grainy aftertaste. This is so plasticky, I cannot believe it was ever drinkable.

Bottle (thanks to bierkoning !) Hazy, yellowish coloured, medium-sized foam; heavy citrus-fruity aroma, supported by a big touch of coriander and yeast; sweetish (wheaty) flavour, medium bodied; citrus-fruit and mmuch of coriander in the finish, that makes the beer taste like cellulose thinner.......Ugh !
