The microbrewery is founded by Achilles Van de Moer on the passion for special beers. After 7 years of trials with different beers, the decision to start a microbrewery in Itegem was made in 1999. The brand name of beers is “Serafijn”. All beers are high fermentation brews, with second fermentation in the bottle. Most of the beers are contract brewed, but some of them are also brewed at their own location.

In 2015 Achilles became part of Caupona bvba (of the Prik & Tik stores in Heist-op-den-Berg and Herselt). The brewery is now called ''Brouwerij Serafijn.'' That is the new company in Heist that houses the Serafijn beers. The former microbrewery in Itegem has been dismantled.

The beer is now brewed at the Pirlot brewery in Zandhoven.

Bottled (from beerplanet.eu). Slightly hazy amber colour with particles floating around, quite a big white foamy head as well. Had a bit of preassure, so it tried to avoid getting drunk, but I was faster this time (due to BBE date in 2009...). Aroma is toffee, mild alcohol, caramel malts, some yeast, and spices. Flavour is quite similar. Very nicely balaced. Long toffeeish and quite sweet malty aftertaste as well as some alcohol.

From the Rare Beer Club. Sampled from a 750 ml brown bottle this beer poured a bright orange-caramel color with an enormous foamy orange-beige head that lingered forever and produced good lacing. The aroma was yeasty, sweetish, tart and had faint vague fruits. The flavor was dryish, tart and bitter with a bit of vague citrus and a faint peppery and musty undertone. The finish was medium length dry, tart and citric. Moderately full bodied. Mediocre.

Clear amber color, small steady white head. Fruity, citrusy hoppy, a bit sweet nose. Crisp foamy mouthfeel. Some fruityness (passion, pineapple), light alcohol, grassy hoppyness, fruity sweetness in the finish. Light citrusy hoppyness in the aftertaste. Ok summer drink. A bit slim.

Bottle 750ml. [ Vintage BBF 0910 ]. Clear medium to dark amber yellow orange color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, toasted - caramel, moderate to light heavy yeasty, overripped fruit. Flavor is moderate to heavy sweet and moderate bitter with a long duration, overriped fruit, malty. Body is medium, texture is oily, carbonation is soft. [20101022]

Bottle @ Willems, Belgium. Pours cloudy golden with a spritzy white head. Nose is yeast and exotic fruit. Dry and fruity flavor with yeast and grassy hops beneath. Full bodied. Very tasty!

Dark amber color, steady off-white head, floating yeast particles. Fruity apricot, red currant and hints of white pepper and grains in the nose. Medium to full bodied. Malty and fruity with peach, banana and berries, some alcohol. Anyhow quite one-dimensional for being "a grand cru" brew.

Hazy orange color, decent white head, some floating yeast. Aroma is yeasty, white peppery with hints of orange. Medium-bodied with crisp carbonation. Bitter spiceyness in the flavor: white pepper, citrus, but also yeast is strongly present. Yeast tastes a bit unclean, otherwise reasonably refreshing.
