Description
Formerly known as 'La Face Cachée De La Pomme' and 'Domaine Neige' but those names no longer legally belong to François Pouliot. But this is the same orchard where the original ice cider producer continues his business after losing his trademark names in a legel settlement with his former business partners.

500ml bottle at the January DC Ratebeer tasting. Poured a kind of dark, very clear apple juice color. Totally still. Aroma was a blast dry, sweet, boozy apple skins. Smooth apple notes. Some brandy. Apple skin. Smooth, hot, but pleasant as it's consumed. Really nice, smooth character.

Pour from 750ml bottle (thx, Alex). Pours a clear dark golden with no head. Aroma is sweet, apples, some wood notes. Taste is similar, moderately dry and... bitter. Ok.

Bottle. Pours clear shiny amber. Aroma is dried apple rings, pear, honey. Body is heavy, strongly sweet but counterbalanced incredibly well by a nice acidity. Flat, oily, pure nectar. Long sweet apple palate. Incredibly balanced and drinkable, super strong and intense flavours. An outstanding beverage!

Bottle split at RB Best Encomium share, Santa Rosa, 30/01/16 - Many Thanks ! Rich amber with a decent off white covering of bubbles. Nose is sweet apple pulp, vanilla, candied sweets, fresh and sharp. Taste comprises sweet apples, orchard wood chill, light vanilla ice cream. Full bodied, light prickle, oily, sweet. Decent but a touch too sweet for my liking.

(375ml 2012 bottle from SAQ, bought and shared by my awesome girlfriend phyllomedusa) Pours a clear deep amber colour, thick and with solid legs. Aroma is sweet and super-concentrated, baked apples, apple preserve, caramel, preserved mixed berries, light tropical floral notes, honey, cinnamon, warm and lush. Flavour is wow. So rich, lush, deep and concentrated. Layers of different apple cultivars and their flavours baked with brown sugar and honey, dragging out notes of oranges, sweet strawberries, a touch of lychee canned in syrup, soft cinnamon and wooden spicebox. Full viscous mouthfeel, syrupy, no alcohol at all. This is seriously intense business all around, no doubt it's sweet but it's so big in flavour and complexity, with attendant mouthfeel, that it never really feels overbearing. Just indulgent. Certainly every ice cider doesn't need to be like this, but it's tough to beat!

Bottle shared by AdamC on 7/7/17.
Clear bronze-amber.
Smells buttery right away, but not any real toasted oak character. Lots of wood and apple tannin with a light hint of almond that adds to the complexity and overall nuttiness. Perhaps these are manifestations of oxidation? I have no real idea how ice cider oxidation manifests. There’s a good spice-like character to it on the end that helps enliven things with deep red apple skin-like notes and light toffee-like sugar character that completes the intense picture. Shockingly low booze character; no rough edges or sharp esters whatsoever.
Rich toffee, butter, red apple and light almond with bready-caramel, what must be oxidized, notes that work just fine, adding light dryness. More of the spicy notes seen from the nose, though I’m not sure from where exactly they come. They work well balancing somewhat, the sweet, moderately syrupy character of the beer. Rich, luxurious but not boozy. A weird one, and maybe I just don’t have enough experience with aged/oxidized ice wines. Certainly seems well-made to me.
