Description
in 1842 Thomas Dixon Ridley built his brewery on the banks of the River Chelmer. It was here that the Ridleys’ great tradition of brewing was born. The brewery thrived and Ridley’s beer was enjoyed at inns from Southend to Saffron Walden. Over the next 163 years six generations of Ridleys honed their skills and perfected their palettes to bring the people of Essex the best local brews, until the brewery was sold in 2005. In 2012 Nelion Ridley takes up the mantle once more, and with his craft brewery ‘Bishop Nick’, is devoted to keeping Essex ales sacred.

Clear deep amber beer, tidy bubbly pale tan head. Light palate, moderately dry, good fine minerally carbonation. Mellow malts, a touch of pleasant chocolate grain and mild and thin malt cream. Brambling Cross doing it's dark berry good thing, albeit mildly, under a little crisp pine. Modest Cascade citrus. Light crisp finish. Another crisp and drinkable brew from the enormously improved Bishops Nick. Not quite as rich as some other recent offerings.

Fuggles, Goldings, Celeia and Aurora hops. Clear deep amber brown beer, tidy bubbly pale tan head. Smooth palate, semi dry, good fine minerally carbonation. Bright chocolatey malts well integrated with blackcurrant and a whisper of cherry. Trace of mint. There is more English hop goodness going on but the flavours are too hard for this palate to pick apart. Light crisp fruity chocolate finish. A very fine and very sessionable porter.

Godiva, Jester and Motueka hops. Dark Munch and Crystal 100 malts. Clear amber beer, good bubbly cream colour head. Smooth palate, light and semi dry, decent fine minerally carbonation. The malts bring a modest creamy sweetness, tiny dash of toffee and mere suggestion of choc. The trio of hops impart crisp pine and a light lime. Touches of tangerine and blackberry. More typical English hop fruity complexity but hard to pick apart. Light crisp finish. Hop juicy, complex and drinkable. Rather good.

Cask handpull at The County Hotel JDW Ashford. Clear gold colour lasting white head. Some grassy hay hop Some light pale malts. Some dryness on the finish. Decent enough golden ale. Clear. Good condition good temperature. OK.

Almost clear burnished gold beer, small bubbly pale cream colour head. Light smooth palate, mildly dry, decent fine minerally carbonation. Smooth sweet malts, slightly dry. 3 exciting new hops then? Apparently anonymous ones! Possibly HBC1019 I would guess but, used very sparingly. Yeah a little kiwi lime hop underneath. Trace of lime peel before the light and semi dry finish. Another decent Nick brew, but don't lose all the ground you have gained guys, by getting stingy with the hop delivery a d hop info!

Crisp start to the hops, light cooling pine into a modest but pleasing Sorachi vibe. A little juicy lemony citrus on the back end. In the middle, El Dorado seems to be quite floral here. Light and crisp finish. Decent. I think they have backed off the hops here for some reason, perhaps budgetary, but it does show. Not quite as good as some other recent brews from the Nick but still good.

Bottle. Clear deep red with a fat coat of cream head that lasts pretty well. Bread, dried and stewed fruit aroma, hints of chocolate. Slightly less rich than that suggests with a little more spiced bitterness. Would guess higher ABV. Charming.

Cask at Ritz JDW, Lincoln. Brownish colour with an off white head. Aroma and taste are malty later. Medium body.

Cask at Picture House, Stafford. Pours “bitter brown” with a small off-white head and good lacing. Not much of an aroma – just vague hints of treacle and biscuits. In the mouth it is quite sweet with a creamy texture and flavours of toffee, fudge, nuts and malts. A little spice comes through later leading to a slightly bitter finish. This is a decent premium bitter.

Dunno why this is split from the other version? Whatever! Near opaque dark brown beer, decent pale tan head. Palate is light and mildly dry, a decent fine minerally crispness. Thin chocolate malty biscuit base. Tangy thin coffee and a touch of red berries before a light, fairly dry and crisp finish. Leaves a mild bitter linger. Comes over as a nice mild.
