Foxy-orange. Very slight, white head. Vineous nose, complex, like very old sherry, acetic acid, fruit. Taste is vineous again, esterish. Dried apricots and nuts. Some Brettanomyces too, 't would seem. After some time, a lactic component. Slick, oily mouthfeel. Dry. Alcohol- and acidburn. A bit nutty aftertaste, that and the esters keep flavour going for a long time. Complex is too shallow a word. Very old fortified wine procures similar flavours, similar impressions. Truly superb realisation.

2003 version, 7% ABV. Cloudy orange/brown color, enormous frothy lasting head. Spicy and yeasty aroma. Taste is also yeasty i guess, spicy, cane sugar, hint of honey, little alcohol. Bit dry palate. Not the best brew by De Dolle.

I poured as carefully as I could, and still the frothy head overtook the top of the glass, a foamy mountain begging to be demolished by my sips - smells like yeasty candy - the taste? the only way to describe it is liquid cake, complete with frosting - a little alcohol burn near the back, but otherwise a sweet, yeasty journey into Wonkaville - if I had to imagine the taste of fizzy lifting drink, this would be it.

(Drunk under the name Museumbier 2002) Pale yellow with orangey shine, slight haze. Abundant white head, quite tenacious. Nose gives malts, caramel - strange for a rather pale beer. Alcohol and sweet smell too. Smoked, quite obvious touch in the first taste - as if mildly smoked malt were used. Bitter background - hops, this, with a slight citrussy touch. There is some salt in this beer, after some time definitely strong soft cheese. Retronasal rhubarb. Creamy mouthfeel, even despite subdued yeast. Slight tartness, some alcohol. For being the basic blond beer, this beer is as complex as some of the top-offerings of a lot of other breweries

Pale amber colour; thick, creamy-coloured head. Nose of overripe grapes, raisins, dried fruit and some alcohol. First bitterness in the taste, then follow liqueur, very much sweetness; light bitterness again AND some sourishness. More dried fruit. Retronasal, the acidity is more outspoken. Very full-bodied, slick-oily mouthfeel. In the aftertaste, sweetness reigns and gets the aroma of a vintage port.

What a fun beer! Tart green apple, green banana, and fresh bread dough aroma. Full foamy head with dull copper color. Tart and tantalizing with apple, bready and yeasty flavors. Dry, sharp finish. Warming alcohol in the chest. Immediately intoxicating and heady - somewhat fuselly, my head is swimming! Otherwise quite nice, although a little hard to finish a whole 750 by yourself. Final note: not overly foamy at all, didn’t lose a drop - head was large but not over-sized.

Golden amber; winey nose - sweet oak, cork, deep fruit and light alcohol. A tough beer to rate. It was one of those beers where you like it, but can't think of too many things to say about it. It's all about the Bordeaux aging, calling up hunger for Colston Bassett Stilton. In fact, it is so winey, that although I enjoyed letting it wash over me, I sat thinking a) where's the Stille Nacht? and b) this is surprisingly one-dimensional. Maybe I'm trying to evaluate this the wrong way, but this seemed to be satisfyingly unsatisfactory.

Sampled draught at Akkurat, Stockholm.
Hazy, reddish brown. Woody nose. Dry and hoppy solidly malty. Peppery, rounded mouthfeel and some vinou qualities. Salty bitterish finish.
Old rating, bottled. Deep ruby and lively with rich, firm head. Vinuous nose. Sweet and lean with rich toffee flavour and some lactic acidity. The finish has notes of cherries and a short sting of bitter hops. Complex and really tasty. (9/5/8/4/16)

Very cloudy beige color, big creamy, frothy head. Spicy aroma, not as spicy and fruity as the usual Dolle brew. Bit earthy taste, malty, yeasty, spicy. Not the best Dolle brew, and that's an understatement...
