Description
We have been making cider since 2000 when we had to collect the apples from an old orchard which we rented for our horses – lots of apples and horses don’t mix! Thus began a fascinating voyage into the folklore, the processes and alchemy of the cider maker’s art. We began with the traditional farmhouse style ciders that finish as dry clean cider but often needed sweetening to enhance the flavour. Then followed a long process of rediscovering the ancient cider maker’s art of “keeving”. This involves removing a large element of the natural yeasts and nutrients prior to fermentation, while retaining its own natural sugars.

All of our cider is produced through slow natural fermentation with no added sulphites or other chemicals. We start with good quality cider apples from our own and our neighbour’s orchards here in West Dorset, using a blend including Dabinett’s, Yarlington Mill and Chisel Jersey’s. We use 100% of the juice, pressed out in our cider shed at Lancombe Cross, West Milton. After a long slow fermentation which locks in all those delicious natural flavours and colours, the cider is presented for your enjoyment.

Bottle from Scrattings. Light cloudy gold, small foamy head which dissipates slowly. Aroma of apple cores and woody notes, hints of dryness. Taste of dry grainy apple juice, wood, light funkiness. Medium bodied with a low carbonation. Good.

Bottle from Scrattings. Pours a cloudy dark gold/light amber with some consistent white foam. Aroma of fruity apple, brown sugar, caramel, wood. Taste of tangy apple with caramilsed sugar, apple skins, semi dry with light acidity in finish. I like this style of cider, very tasty indeed.

Third of a point on cask at the Donny brewpub. No head. Clear deep golden pour. Light sweet and tart aftertaste.

BIAB sample courtesy of Grumbo, cheers Graham! Hazy orangey gold colour, afew bubbles on top that dissipate away and aroma of apple flesh, citrusy. Taste is sweetish, tangy, mellow apple, citrus notes, along with some tartness and tannin. Medium bodied, soft carbonation, dry tart finish. Nicely drinkable.

30/7/2021. From BIAB at the Redoubt Beer Festival, Harwich. Pours cloudy orange gold with a bubbly/frothy white head. Very appley aroma, citrus, light funk. Moderate sweetness, medium tartness. Moderate body, soft carbonation. Dry, tart tannic finish. Enjoyable.

500ml bottle. Hazy yellow colour, short-lived white foam head and aroma of pear, solventy funk. Taste is sourish, pear, floral fruity, mellow, citric, with funk, and solvent & biscuity hints. Slick mouthfeel, medium bodied, low carbonation, medium-dry smooth peary finish. Quite OK

31/12/2019. Bottle sample courtesy of minutemat, cheers! Pours almost colourless, just a hint of very pale yellow/green. Aroma is quite musty, ripened pears, with a damp cardboard edge and a little biscuit. Medium sweetness, with a light but zingy tartness. Moderate body, oily texture, fizzy carbonation.

75cl bottle from Scrattings. Pours a pale greenish yellow. Soft musty perry pear aroma. Taste presences an initial sharp tang, pleasant natural carbonation, soft perry pear fruit, moderately sweet, a touch dry on the close. Decent.

Box @ Post Office Vaults, Birmingham. Pours a misty orange, greets with a moderate acidity, good fleshy pure fruit, crisp, gently sweet, soft acidity. Nice.
