Description
Wide Street Brewing Company specialises in mixed fermentation methods and 100% Brettanomyces beers. Our vision is to brew innovative beers with alternative fermentation methods. Our house yeast is a custom blend of Brettanomyces, saccharomyces and lactobacillus strains from Bootleg Biology, a yeast laboratory based in Nashville, USA. This gives our beer a distinctive dry mouthfeel and enhanced fruity flavours. We have released many unique styles of beers since we started in May 2019 such as saisons, grisettes and table beers as well as mixed fermentation aged sour beers. We also love experimenting with new hops and brewing styles and have recently released Farmhouse Pilsner and a Cashmere IPA with no Brettanomyces in them

750ml bottle. Opalescent, orange golden colour with small, creamy, moderately lasting, minimally lacing, white head. Bretty and vinous fruity, minimally woody aroma, wheaty malty background, notes of white grapes, funk, some oak. Taste is tart, bretty funky and vinous fruity, minimally woody and wheaty malty, notes of white grapes, some oak. Watery texture, slightly astringent palate, medium to fine, prickly carbonation. Relatively clean and focussed, very balanced, but not overly complex - decent.

Tap, clear golen beer, small head. Aroma is wood, vinous, some hints of brett. Taste is the same, wood, vinous, yeast, brett, sweet and tart. Quite a dry aftertaste. Very nice.

Panda thanks to Cloin. Near clear deepish gold beer, decent bubbly pale cream colour head but it doesn't last long. Light and semi dry palate, decent fine minerally carbonation. Thin pale malts, sweet enough. Light pine and light and mildly ripe citrus. The Brett is judiciously used here, not that obvious but it does add a mild savoury aspect that elevates this brew. Finishes light and semi dry. Works well. Could imagine sinking a few pints of this whilst recognising that it's not quite a beer to be drinking in to the early hours.
