DESTIHL was founded on the promise of supporting flavor and boycotting bland. We're an independent, production brewery that was established in 2013 in Bloomington-Normal, Illinois to brew beyond the confines of typical beers. Our team combines centuries-old global brewing traditions and new American craft brewing ingenuity & artisanship to produce a wide array of beers for every palate. We brew more styles of beer because we have a passion for brewing and because you have a passion for unique, craft beers. The result is a diverse offering of intensely flavorful beers that are anything but bland, from our award-winning WiLD SOUR Series, barrel-aged Saint Dekkera® Reserve Sour Ales and Dosvidanya® Russian Imperial Stout, to our many Belgian-style beers, IPA's, other wood-aged beers, classic styles and exciting seasonals. DESTIHL has become a brand, but we have not strayed from our roots. We take pride in our values and will continue to grow and support our local community. On tap at Toronado Seattle, pours a cloudy orange with a small white head. Aroma brings out lots of funk, along with orange and red wine. Flavour is dry and funky, with fruity funk, light acidity, and some barnyard notes. Quite complex, not really an authentic lambic, but nice stuff.

Draft pour at Brouwers Big Wood festival. Pours a golden color with a tint of red. A ton of candy strawberry flavor right up front. The runts candy flavor strawberry. Very sweet initially but decently sour flavor. Fresh strawberries aroma as well. This one is a little different from my usual sours. Light wheat flavor background but full of fresh berry flavor. Really good beer here.

Winter Beer Fest, Philadelphia: Pours golden with a white head. Aroma is belgian yeast, light fruitiness, and mild Belgian hops. Taste is mildly bitter. Slightly sweet. Pretty dry around the finish. Pretty good.

Draft. From notes. Roasty with notes of slight pumpkin pie spices and decent dark chocolate hints. Pretty good.

Keg at Belmont Station, PDX, 08/11/14. Clear pale golden with moderate off white edgeing. Nose is pissy knickers, lemon rinds, citric tinged straw, light acidic wafts. Taste comprises dank straw, apple core, lemon rinds, pissy hay bales, subtle acidic leanings. Medium bodied, fine carbonation, semi drying close. Solid refreshing ’Linner which helped ease the pain of my bottle shopping!

Draft pour at The Collective. Couple weeks back, rating from my notes. Pours a lighter golden color with a sweet citrus aroma. Bitter and malty up front with a quick transition to sweet mango flavor. Overall, a pretty decent beer.

12oz can. Murky thick orange-tan body. Quick fading head, leaves some soda-like residues. Woah. Big tart lactic tones, probably the sourest Gose I have tried. Biting, a slow sipper like a sharp gueuze. The sour tones are nice, but a little unruly and over-the-top. There is no balance or delicate mouthfeel here, this is a real hardcore sour. The salt adds to the dryness. This is a surprisingly challenging beer. White wine vinegar notes. I find Destihls sours to generally be over-innoculated, and this is a prime example.

Draft at Olympic. From notes. Loads of mango and tropical fruits with a decent malty backbone. Very good.
