Description
Although we hail from Chicago, we met in Munich at the Doemens Institute while studying for our Master Brewer Certifications. While bonding over the great beers and food of Bavaria, we soon discovered a mutual respect for the traditional brewing methods of continental Europe. As two educated brewers cut from similar stock, we decided to join our talents and shared vision into a stronger form, like a dovetail joint.

Our goal is to produce beer of the highest quality similar to the level of craftsmanship found in fine woodworking. We are merging continental European styles and techniques with American creativity to produce the kind of beers found in small, family-run breweries in Europe.

Belcher at the roost pours a murky, translucent gold with some clumpy white head. Nose is nice, doughy, grassy, grainy and bright. Real fresh and bright, dough, grass, yeast. Creamy and medium bodied. Really nice.

From Beer Drop. Not fresh...

Pours a hazy light orange, 2 finger head of foam, lacing and retention excellent.

Smell is bready, lemon, light hoppiness, tartness?

Taste is lemon tartness, some bread, ugh, hard to drink. September 2024 canning, this is off.

Not interested in this again unless it's fresh.

Pours bright yellow with a thick, fluffy white head. Aroma of flat resin, some oak. Taste has overload of smoke and oak notes, like a rauchbier but with some resin and heavy carbonation. Palate has more oak, more smoke notes, nondestinct resin. Interesting.

16oz can. Really nice IPL. Retains a nice clean, lager base, while taking it in a different direction with the hops. Still has that dry, almost Mittelfruh tone up front to me. Really enjoyable beer.

Can from a liquor store in Chicago. Pours brown with red highlights, large spongy tan head, faint caramel-mocha aroma, medium carbonation, initially sweetish caramel-mocha taste, thin body, long caramel-mocha finish. Decent porter.

Cassis, sorel. Oak and some grapefruit. Finish is a little harsh. But not bad. Tap at High Side.

Draft at High Side. Poured a very light, very slightly hazy ruby red color with a small white head. Big buggy lambic notes, light dry sweetness. Really pleasant, light fruit. tasty stuff.

Tulip at the brewery - oh, dang, this is nice - a really soft plum sweetness up front quickly dissipates, making way for dry oak, light funk, and gentle acetobacter - these flavors meld together on the tail end really well before a light plum sweetness returns for the finish - nicely balanced.

.3L at the brewery - hazy orange - soft in the mouth, but the carbonation is a bit flat - tastes more like a hefe than a weizenbock, though I know there is a fine line there - lots of banana and clove - some honey sweetness and then some spiciness late - finish is a little watery - it’s okay.

.3L at the brewery - hazy amber with a thick head - notes of dark bread and raisin, a hint of spice and caramel - smoke arrives late and is deep and complex - sadly, the finish gets a little watery and flat, so it’s not as satisfying and consistent as classic examples of the style, but it scratches the itch.
