For Cyprien, Antoine and the entire Fauve team, the adventure began in Paris in our brewpub "Les Cuves de Fauve", in the rue de Charonne, our location in the 11th arrondissement. which includes a restaurant, a bar and a micro-brewery.

And then in 2021, so 2 years after opening the brewpub, the Fauve project developed a little further south with the opening of a production micro-brewery near Montpellier (more precisely in Mauguio) where we now brews the majority of our beers and which also hosts a cellar dedicated to our barrel-aging program.

We ended 2024 with a bang with the grand opening of a brand new brewery in Vendargues, on the outskirts of Montpellier. We designed and customized everything from start to finish! We created this facility to brew all our favorite beers, with even greater precision and versatility.

A taster at Les Cuves de Fauve, Paris. Dark brown with a reddish tint, small head. Aroma is nutty, caramely, maple syrup, fresh ground coffee and vanilla. Smooth, medium to full body. Sweet vanilla and cocoa pastry levels out with a roasted coffee and roasted malty touch. Oily, slick, still easy to drink. Not too sweet but finishes sweet.

A taster at Les Cuves de Fauve, Paris. Hazy orange, small off-white head. Aroma is moderately to heavily hoppy, tropical fruit, soft zest, grapefruit and a touch of coconut. Creamy, soft and juicy. Alcohol well hidden, some warmth. Flavour is sweet stone fruit and tropical fruit, thank God almost no coconut, finishes dry with a bitter herbal hint.

Flavour is malty, lightly fruity, moderately spicy with some warmth. Flavours are baked apple, cinnamon, cloves. Smooth, drinkable, alcohol slightly present, finishes sweet and quite abrupt.

As Fauve Avalanche Noire. Nitro tap at Les Cuves de Fauve, Paris. Shared with petit Dina. Dark brown to black, small creamy beige head. Aroma is roasty at first, nutty, chocolate and a burnt touch. Smooth, creamy and soft. Very drinkable. Flavour is toasted bread, roasty, some caramel and slightly burnt. Great balance, somewhat sweet, but roastiness evens it out. Finishes dry with a roasty aftertaste. You will want another pint.
