Description
In August of 2005, the first jack hammer went into the ground in the empty warehouse in Pleasantville, New York, that was to become the living dream of our founder Scott Vaccaro. We brewed our first batch of beer in December of 2005. In December of 2011 we moved to Elmsford, finished construction of our new brewery, brewed our first batch of beer, and slowly shut down our old location. In 2014 we decided that it was time, after 9 years of making sour and wild ales, to take it to the next level by opening our new sour ale production wing, lovingly dubbed the “Fermento Funk Facility”.

Appearance: opaque burnt orange color with a two finger white foamy head which dissipated nicely to leave some light lace
Aroma: orangey to grapefruity and lemony hops up front with a light bready malt bill
Flavor: combines the prior noted aromas to a fine juicy sweet to bittersweet quality; finishes with mixed citrusy hop tones and clean maltiness
Texture: leaning towards medium bodied - maybe a touch under; semi-sessionable; good smoothness with a touch of dryness
Overall: pretty nicely done NEIPA worthy of returning to.

Appearance: hazy burnt orange color with a finger's worth of white foamy head which dissipated nicely to leave some messy lace
Aroma: big mixed citrusy hops up front with a light mango to papaya hop bitterness in the secondary with a clean biscuity malty underneath
Flavor: meshes the prior noted aromas to a sweet juiciness to a bittersweet tone; finishes dry with a sweet to bittersweet citrusy to mango quality
Texture: light to medium bodied - leaning towards medium just a bit; sessionable; some smoothness with the dryness rolling over the tongue
Overall: nice NEIPA worthy of coming back to.

Bottle to chalice.
Appearance: golden copper to yellow color with a finger's worth of white foamy head which dissipated nicely to leave some light lace.
Aroma: sweet citrusy tones, some clove, banana esters, Belgian sugars, red apple and allspice? Yeah, I think that's allspice.
Flavor: seemed to combine the prior noted aromas to a semi-sweet to slightly spicy sort of blend; finishes dryly with slightly clove-like with the banana esters and apple tones
Texture: light to medium bodied, leaning into being sessionable; light smoothness but also a slight dryness gripping the tongue
Overall: not bad for what it is, I think I somewhat liked this but not as up to par with the big boys of the style and I'm not sure why there is "allspice" in a Belgian styled golden strong ale, that kinda makes me think a little bit about this beer.

Appearance: bronzed copper color with a light transparency about it; one finger white foamy head dissipated nicely to leave subtle lace
Aroma: orange, grapefruity and subtle piney hops up front with a light malt backbone
Flavor: blends the prior noted aromas to a fine bittersweet quality; finishes semi-bitter with a light maltiness
Texture: light to medium bodied, sessionable; some smoothness with some hop bitterness acting semi-abrasive with the tongue
Overall: nice enough AIPA I believe I could come back to.

Bottle to tulip.
Appearance: copper/orange color with a finger's worth of white foamy head which dissipated nicely to leave some light lace
Aroma: grapefruity, light piney tones and a light boozy whiff; caramel/toffee malts? Yeah, I think so.
Flavor: seems to blend the prior noted aromas to a fine bittersweet quality and adding in a little bit of lemon and orange; finishes mainly with the grapefruity and piney hop tones and subtle malts
Texture: medium to full bodied, this is a sipper! light smoothness but also a good deal of dryness as the hops do provide the bitterness assertiveness, I expected them to.
Overall: so a TIPA that gets a bit boozy in the aroma, hmmmm,..well, maybe not the absolute best effort by Captain Lawrence but maybe this is a bit of a work in progress, part of me wouldn't mind coming back to along down the line as I thought I heard they were working on a bit of a recipe change to this. Or maybe I'll have to look for the possible "reinvention" of this beer.

Appearance: amber color with some transparency about it and a one and a half fingers of white foamy head which slid off nicely to leave some light lace
Aroma: citrusy and piney hops with a clean malt base
Flavor: seems to follow through from the aromas as it shows it's bittersweet mentality to how the beer tastes; finishes piney bitter and with some of the malts
Texture: light to medium bodied; sessionable; some smoothness with some dryness
Overall: it works as an APA, I believe I could return to this.

Appearance: golden yellow to almost orange color with a two and a half fingers of white foamy head which dissipated nicely to leave some light lace
Aroma: some orange peel and coriander with some lemony hops and a subtle sweet wheat malt backbone
Flavor: seems to blend the prior noted aromas fairly sweet as the coriander barely shows any sort of spice here; finishes through the wheaty sweetness with a touch of the orange peel
Texture: light to medium bodied, sessionable; some smoothness with a touch of citrusy peel bitterness assertiveness
Overall: nice enough APWA I think I could hang with again on a Summer's day.

Bottle to nonic glass.
Appearance: super dark brown in color with a two finger eggshell white foamy head which dissipated nicely to leave some light lace
Aroma: dark chocolate notes, some coffee roastiness and light citrusy hop notes
Flavor: meshes the prior noted aromas to a fine roasty to bittersweet blend; finishes roasty and with the citrusy hops
Texture: light to medium bodied, leaning to slightly being a sipper; not so smooth as plenty of dryness and some roasty to citrusy hops both grind into the tongue - however, this one does not show as much "palate wrecking" capabilities as many other black IPA's do
Overall: though a bit weaker on the "palate wrecking" capabilities and a subtly lighter hue than many other black IPA's, this might be a decent grab if you're truly craving a black IPA in a pinch.

Appearance: black in the pour and black in the glass with a two finger tan foamy head which dissipated nicely to leave some light lace
Aroma: deep dark chocolate, milk chocolate, black coffee roast, sweet earthiness, some light woody notes and sweet wafer malts
Flavor: meshes the prior noted aromas to a fine sweet to roasty quality with a light bitter note from the dark chocolate underneath; finishes dark chocolatey and with the coffee roast
Texture: medium bodied, good as a sipper; some smoothness but also a good dryness about it
Overall: pretty nicely done impy stout I believe I could come back to.
