Description
Wilding Cider is made by Beccy & Sam Leach, of former restaurant fame with their wonderful Bristol restaurant Birch. We are orchard cider makers and farmers, based in Chew Magna, North Somerset. We grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way.

After some years of hobby cider making we went full time in 2018 and scaled up production to 6,500 litres with fruit from our own 4.5 acre orchard and three other orchards around Somerset.

​Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.

We mostly bottle cider in 75cl sparkling wine bottles and mature for at least a year before release.

750ml bottle from Beer Zoo. Orangey golden colour, short-lived white foam head and aroma of tangy apple, barnyard funk, caramel hint. Taste is sweet and tangy, fruity apple, woody, orchardy, funky, some slight caramel, along with mellow tannins. Medium bodied, low soft carbonation, medium-dry tannic finish. Nicely drinkable.

Draft at Manchester Beer & Cider Festival: Poured a coppery with no head. Aroma is earth apple. Taste is super dry earthy apple.

Draught at Manchester Beer & Cider Festival, 2020. Golden amber colour, afew bubbles on top and aroma of mellow bittersweet apple, barnyard funk. Taste is tangy apple, light funky, orchardy, barnyard, citric and tannic, spicy. Medium bodied, low carbonation, dry tannic finish. Nicely drinkable.
