Bottle thanks to SaltyGrog: Poured a maroon with a with bubbly head. Aroma is berries, black current, honey. Taste is sweet and yet just a subtle tart, berries, honey.

Bottle thanks to SaltyGrog: Poured a murky orange with a white head. Aroma is fruity, cherries, wild flowers, floral, apples. Taste is pungent sharp apples, floral, tangy, tart, bitter, honey.

Pretty lo-ball pour at home. Bottle club 750. In the fridge since December. I think this single batch was sent out initially in 2023 & again in early 2024. I've never seen the locust honey version in the description. Clear, oily, pale gold. Thin but eager bleached head. Waxy, sharp floral nose: lavender + orange-ish. A touch too potpourri. Bittersweet leaning sweet flavor. Floral & moderate astringency that lingers. Herbal pith. Nice lemon zing from my favorite kind of honey. Waxy textural buildup without the wax taste. Super crisp, beaded, natural carbonation that doesn't die off much at all, 7/5. I feel all of the 12%. Finish is brut dry. Quaffable & delicious. Cheers.

2021 bottle from their online bottle club, via Honey's in NY. Shelved for a year+ in the basement. Eventually poured into a mojito glass @home. Mostly clear, pale gold, if a little dull, intentionally still. Bright then round acidic contrast. Sharp, lovely herbal, mild to moderate wax, heavy chamomile-apple warmth, very minimal & washed out oak, but the texture is there. Warming enough but the acid is lovely & melts into the green texture. Lovely.

750mL bottle pour, 3/21/24 at Super Bien. Clear, pink, carbed. Nose is funky. Bit of sharp oak, strong acidity from ginger and fruit but no apparent elderberry. A bit chalky, very bitter. No sweetness. No alcohol. In the mouth there's a bit of body before leaving for tannin and chalk and gingery-elderberry. Again, bone dry. Bit sharp overall, could use more age, but interesting.

Clear 750 bottle from their fall online club. Chilled for months, mojito glass @home. Clear, bright, magenta-orange amber, quick fizz head. Sharp, bittersweet, leaning bitter nose. Cranberry, bitter-green, sour berry & wood. Very Negroni flavor. Cranberry, orange peel, cherry, minty juniper, lemon, heavy wax. Fizzy, beaded carbonation is excellent. Thin, waxy. Kinda hot for a lower abv. This brand is always great.

Clear bottle from their fall bottle club. Clear, cranberry amber, lace-y, still pour. Half sharp, waxy, very vinous, very red scent. Half-sharp, juicy, grape-y, floral honey coat, orange-verbena, hint of oak. Not a ton of specific honey notes. Thin floral honey, off-dry, fresh oak, orange oil, intentionally flat. Super sessionable & tasty.

Clear 375ml bottle from their CSA. Mojito glass @home. The OG bottling a couple years back was raspberry pink in a 750ml, but it has since died back to a clear, if slightly jellied, pale straw color. Smell is lactic, gummy bear, floral, glue, dry berry bubble gum scent. Taste is bittersweet, more so sweet. Similar qualities to a clear, sweet vinegar Thai dipping sauce: White vinegar, white sugar, hibiscus floral, bubblegum, big lactic acid to cut it all down. Lingering floral. Kinda simple for Enlightenment. Thin, if still slightly yeasty. Intentionally still(but would be awesome if carbed). Plenty acidic, Mellow abv, bit too sweet. Still kinda good.

Bottle from their mead club, sometime in 2018. Cellar sleep since then. Dull, protein hazed, pale honey pour. Sweet onion, goldenrod, lemon oil, very sweet florals. Flavor is sharp, super floral, super stringent, super acidic, big & bold chrysanthemum/lavender/potpourri. Medicinal. Lime pith & camomile finish. Waxy residual. Thin, intentionally still, too acidic. Bold. 750s are so hard.

375ml clear medicine bottle from their inline CSA. Goblet @home. Clear, super dark amber, still pour. Big raisin nose, not much else. Maple, sweet lemon, burnt fruit cake, mellow tartness, brown bread toast & very faint bbq sauce. Finish is more sweet lemon. Maybe too much acid, but it's still pretty good. Still, incredibly thin, medium acidity, surprisingly smooth abv. Okay, but just not what I wanted.
