Eind jaren 80 zijn we thuis, in de Potterstraat te Sint-Pauwels, begonnen met bier te brouwen. Deze bieren werden met minstens eveneveel passie gedegusteerd als gebrouwen. Stap voor stap en met veel passie en kennis ontwikkelden we de volgende jaren onze recepten die uitmonden in onze vlaggeschepen Sinpalsken Blond en Donker. Sinds 1996 zijn deze commercieel beschikbaar. Onze passie en kennis zijn alleen maar gegroeid doorheen de jaren. We zijn dan ook trotse brouwers !!

Doorheen de jaren ontwikkelden we ook ons concept van bier op maat. Meer informatie kan je vinden op deze website.

Onze kernwaarden zijn : Passie, Kennis, duurzaamheid, lokale verankering en sociale verbinding.

Passie en kennis : we zijn al meer dan 30 jaar actief in het brouwersvak !

Duurzaamheid : We zijn er van overtuigd dat we spaarzaam moeten omgaan met onze planeet, daarom gebruiken we lokale grondstoffen en al onze verpakkingen zijn retourverpakkingen.

Lokale verankering : Alhoewel ons bier overval wordt gedronken, hebben we onze sterkste verankering in het ruime waasland. Ons bier is hier heel vaak te krijgen in de meeste drankencentrales.

Sociale verbinding : Bier drinken is een sociaal gegeven, we vinden het belangrijk, Familie De Cock, is altijd al gekend als sociaal betrokken en geengageerd. Dit willen we ook uitdragen door onze bieren samen met anderen te degusteren willen we de sociale verbinding versterken.

Winter edition of Sinpalsken Donker, used to be called Sinpalsken Kerstbier. Bottled in 75 cl bottles with paper wrapped around them and only made in very limited quantities (and not every winter, I assume); found this through friends who are acquainted with the brewer. Dark brown beer with thin off-white head; low carbonation and therefore smooth and very soft, almost buttery mouthfeel; malty and dried fruits, caramel, coriander, light roasted bitterishness in the finish. Interesting but more so because of its rarity than because of its actual taste.

Regional beer from Sint-Pauwels-based beer company De Cock, but made at Van Steenberge. Regular, moussy, yellowish white head, deep peach blond colour with orange hue, misty. Aroma of red apple, orange, coriander, pepper, bayleaf, grass; caramelly and light fruity taste, vague nuttiness, spicy hops in the finish but not really bitter, slick, soft and rather thin mouthfeel. Don’t bother hunting this down if you haven’t tasted it.

Commissioned ale and one of very few really green beers I’ve had so far. Effectively grass green, like some vegetable juice, with loose, pale head with faintly greenish hue. Grainy aroma with lime, grass and plastic-like solvents as well as herbal hops; taste a bit fruity, bit thin, with a long, peppery hop finish but also phenolic, completely out of balance. Points for originality but I do not understand its taste.

Decent strong Belgian dark ale. Malty and fruity, with some countering bitterness. The usual.

11/IV/14 - 33cl bottle from Willems (Grobbendonk) @ home - BB: 28/VIII/14 (2014-361)

Clear red brown beer, huge creamy beige head, more head than beer in the glass (and there's a lot of room for head :p ), very adhesive, leaving a nice lacing in the glass. Aroma: sweet and sugary, caramel, dried fruits, milk chocolate, hint of banana. MF: lots of carbon, too much to really enjoy the beer, light to medium body. Taste: little sourish, lots of caramel, banana, bit bready, little bitter, mocha, little roasted. Aftertaste: dried fruits, caramel, bit hoppy, banana and banana peel, bit sourish, some red berries, metallic touch. Not as bad as I had feared.

6/IV/14 - 33cl bottle from Willens (Grobbendonk) @ Akke's place, Ronde van Vlaanderen marathon - BB: 13/XII/14 (2014-349)

Clear orange to amber beer, big creamy yellowish head, pretty stable, adhesive. aroma: very floral, bit sweet, spices, bit of almonds, sugary, some orange peel. MF: way to much carbon, medium body. Taste: very sweet and sugary start, spicy, honey, banana peel, little bitter. Aftertaste: very metallic, spicy, cloves, bit soapy, coriander, overdose, pretty bitter and metallic ending, lots of banana.

Bottle sampled. Pours clear dark brown with a big bubbly tan head. Aroma of dark fruits, yeast, caramel and a little alcohol. Flavor is moderate to heavy sweet and moderate bitter. Medium bodied with light carbonation.

Pieniste i jaskrawe piwo z slodowym i lekkim profilem. Ot takie piwo pijalne czy codzienne mozna by rzec.
