Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Hail the goat!

440ml can. Slightly hazed orange gold with a very thin white head, bit of an atypical appearance for a hefeweizen. Aroma is, as they promised, very heavy on the yeast esters with massive foam banana and doughy malt. Taste is full on foam banana, doughy bready malt, wheat, light citrus, mild clove/pepper spiciness. Medium bodied.

Can from Against The Grain. Dark brown body with a thin beige head. Low carbonation. Faint lacing. Aroma of cherry, chocolate and coffee. Flavour of hazelnut and vanilla. Medium body with a smooth texture. Soft fizz. Luxurious and sweet - sweeter than I was expecting for a coffee-influenced beer.

Can from Against The Grain. Hazy deep golden body with an off-white head. Low carbonation. Faint lacing. Aroma of mango and biscuit. Flavour of burnt orange and dried mango. Medium body with a smooth mouthfeel. Soft fizz. A straightforward DIPA that drinks well for the ABV.

Can from Great Grog. Hazy brown body with a beige head. Low carbonation. Faint lacing. Aroma of blueberry, lightly roasted malt and minerals. Flavour of cranberry and earth. Medium body with a smooth mouthfeel. Soft fizz. Tart and interesting. Part of me thinks this would have been better without the damson.

Can via the online shop. Poured out mega murky deep purple tinged dark brown. Looked like prune juice. Sits murky dark brown in the glass. There’s plenty of damson in here, then. Head is soppy thick glossy beige. Looks boss. Nose has stewed prunes. Chocolate malts. Sweet oats. Whiff of caramel. Taste is semi sweet with a tiny bit of fruity tartness and low bitterness. Silky on the palate (maybe that’s all the fruit). Fruity semi tangy finish. Ace. Full of flavour and slips down way easy.
