Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay homage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Hail the goat!

750mL bottle, pours black, almost no head. Nose is dominated by intense brandy barrels, burnt sugars, and some booze. Flavour is less harsh, but is still dominated by brandy barrels, a hint of roast, gentle sugars, and some earthiness. Not the most complex malt base, but pleasant enough barrel character. Solid.

Dark brown. Brandyish aroma. The palate is thin, as usual for a European imperial stout. The brandy lends a nice sweetness and vinous note, but it really lacks the malt and alcohol framing .So for me, the base is weak, the treatment not bad, but the overall structure is a bit of a miss.

Poured from 750mL bottle (bb Aug 2035). Very dark brown with minimal biege head. Light brandy, airy toffee cake, feint dark sugars, very feint red wine. Gives me an Asian toffee cake vibe with a feint red wine note. Okay.

750mL bottle. Pours nearly black with a small tan head. Dark sugars and slightly perfumey bourbon barrels on the nose. Flavour has a weird sheepy yeast, some dark sugars, tarty dried berries, and some bourbon barrels. Pretty haphazard, but not bad.
