Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Can thanks to my bro. It pours spiky jet black with a small, deep head. The aroma is dark roasted malt, charred vibes, umami, salty liquorice, treacle, molasses, toothy, chewy, cacao nibs and some fruit cake. The taste is slick, oily, rich, decadent, charred malt, umami, liquorice, dark chocolate, cacao nibs, warming booze, some bitterness, leather, tannin, burnt toast, malt loaf, peppery spice and charred oak with a dark roasted and dry finish. Full body and moderate carbonation. A rich umami stout. Robust and savoury.

330ml draught at Balthazar, share with Finn. Almost black in the glass, film-type layer leaving dotted spots on the glassware. Roasted malty aromas, hints of chocolate. Dark malt forward taste character with moments of cocoa-chocolate joined by liquorice. Drying close with earthy chocolate, gently roasted. Medium bodied. Nice. (Tromsø, 13.01.2026).

Can from Against The Grain. Hazy golden body with a thick white head. No visible carbonation. Faint lacing. Aroma of waxed lemon and watermelon rind. Flavour of pineapple and lemon jelly with a sharp, bitter finish. Medium body with a slick mouthfeel. Soft fizz. A decent IPA, though a little sharper than I expected.

Can at home, 9th January 2026. Pours a darkish caramel colour. Aroma is caramel, resin, citrus. Taste is malty, citrus and pine resin, caramel - it’s good

Sour plum and apricot, some raspberry. Pours orange red without much head. Tart finish. Very nice flanders red. Bottle.

375ml cherry red, beige head. Nose has cherry and strawberry, throat lossange, some pomegranate. Flavor is light malt and all the red stuff. Well blended. Well balanced. Dry. Tart. Medium full bodied.
