Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Hail the goat!

Bottle shared by my bro. It pours deep ruby red with bubbly white head. The aroma is funky, tangy, bright red fruit character, raspberry, rhubarb, jammy, strawberry, plum, fragrant tea, damp oak and vanilla. The taste is crisp, dry, tart, puckering, fairly bright acidity but it dissipates, zingy, sour, raspberry, strawberry, rhubarb, damson wine, redcurrant, red wine, dull tannin, fragrant, granny smith apple, muted alcohol presence and lactic character with a dry, puckering finish. Medium body and moderate, bubbly carbonation. Bright and fruity. Quaffable and fun.

Can shared at Anti-Carnavalstasting 2026. Darker orange color, average sized white to off-white head. Aroma and flavor is malts, hops, but the hop seems off in a way. Hard to describe. Unfresh. No, not a fan.

Bottle via the online shop. Hazed gingery gold. Slim white foam. Nose is Rose’s Lime cordial. Sherbet. Whiff of Lockets sweets, too. Very sweet shop. Taste is citrusy tart dry and a tad sweet. Very effervescent on the palate. Slight acidity. Juicy lime filled fruity tart finish. Nicely novel and easy drinking.

440ml can. Almost black pour, some sediment sinking to the bottom, long-lasting tan head. Aroma of treacle, roasted malts, dark fruits, liquorice. Taste is heavy on the umami favours, lots of treacle, caramel, liquorice, roasted malts, chocolate, leather, malt loaf, tangy dark fruits, oak, bittersweet. Medium-full bodied. Well made stout that's just a bit savoury for my liking.

0.44 l can shared with Ogi at Projekt, Ljubljana. Dark brown to black, small beige head. Aroma is lightly toasty with hints of prunes and smoke. Not very rich or complex. Flavour is metallic, charred wood and burnt toast. Heavy, full body, warming, some alcohol felt. Quite messy and intense, not a good example of the style. Lots of oak and burnt wood in the finish, overwhelming. Dry.
