Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Can from the Oban Beer Seller. Pours clear dark brown with a thin beige head. Some nice lacing. Aromas of cherry, chocolate and nuts. Light vanilla. Taste is hazelnut and more vanilla. Sweet finish.

Op tap bij Bierlokaal de Uiver. Zwarte kleur, dunne beige kraag. Drop, hout, warme alcohol van de whisky, licht rokerig, rozijntjes, gebrande mout, smaak is boozy, vrij dun, rokerige lijkt volledig verdwenen, misschien aanwezig in een hintje salmiak, vanille, koffie. Alle smaken zitter er wel in, maar ik had een dikkere rammer verwacht, en op meer Islay gehoopt. Alsnog lekker, maar niet top.

200ml draught at Balthazar. Shared with Finn. Clear dark copper coloured body, dotted spots on the glassware, film-type layer. Inviting on the nose with caramel malts and dried fruits. Well blended malt-forward taste of bread and caramel complemented by raisin. Nicely roasted caramel malty ending. Mid-sweet. Well bodied. Good drinking. (Tromsø, 10.04.2026).

Tap @ Peders. Hazy golden with a white head. Aroma is sweet, malty, apricot and tart. Flavor is medium sweet and light acidic. Dry and light acidic finish. 020426

Can from the Oban Beer Seller. Pours hazy red-brown with a thin beige head. Aromas of toffee and light spice, some dark fruit. Taste is burnt toffee, warming booziness, mixed dried fruit. Fruity finish.
