Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Medium brown. Aroma hints at dryish, somewhat fruity porter. Soft and sweet. A bit of date? Sweet for a porter, light fruitiness. I get it, but it’s definitely not my type of porter. Goddamn it, kveik yeast.

(Draft at Muted Horn, Berlin, 17 July 2025) Dark red colour with brief, beige head. Fruity, sourish nose with notes of caramel, cherries and balsamic vinegar. Fruity, tart taste with vinegar, oak wood, sour cherries, raspberries and caramel. Low bitterness. More than medium body, with a slight sweetness. Tart, woody and tasty. Very nice.

16oz can pours a burnt orange with a nice, thick finger of white head. Nose is pithy, dried citrus rind, some paper, a little nutty maybe. Something earthy and lightly toasty I'm having trouble putting my finger on. Flavor is chewy malt, a little old school crystal malt or toast, dried citrus peel, less piney and more dried leaves and herbs.

Can via the online shop. Nearly black. Slim dense lasting pale beige foam. Nose has dates. Light roast coffee malt. Some vinous notes. Touch of vanilla from somewhere. Taste is semi sweet with a light twang of fruity tartness. Good depth of body with fine carbonation. Fruity light tart finish. Dates make me shit.

Bottle via the online shop. Hazed deep red. Slim ring of white. Nose is very jammy although not immediately evident the fruit content. Some BA character. Vinous and softly tart. Doesn’t shout Flanders Red. Taste is tart with a nice fruity sweetness. Light acidity on the palate. Drinks super easy for the 7.1% (this is a 2025 version). Juicy tart finish. Lovely fruity sour but Flanders Red it ain’t.

Can via the website shop. Nearly black. Slim super sticky, lasting beige foam. Nose has dark chocolate. Vanilla milkshake. Big coffee vibes. Class here. Taste is semi sweet with a tangy vinous bitterness. Nice depth at the relatively lowly ABV. Slick and smooth. Bitterness on the finish. Nice one.
