Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.
Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition mixed fermentation beer styles we seek to pay homage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

375ml bottle from Etre Gourmet. New Region from Scotland (number 14) Paring with plum from my tree. No liefmans sie klania i do prawie do ziemi, bardzo dobre, zblizone, drewne aromaty, karmel spalony, octowosc zaznaczona nie nachalna, owocowosc to wisnie, porzeczka czarna, oczywiscie sliwka, daktyle. Wspaniale zgrane, beczkowe smaczne. Pycha, doskonale by pasowalo do jakiegos republikanskiego steka po amerykansku:)

(Draft at Mother Kelly's Bethnal Green, London, 17 July 2026) Hazy golden yellow colour with brief, white head. Fruity nose with notes of tropical fruit, papaya, mango, passionfruit and funky hints of yeast. Fruity, tart taste with tropical fruit, passionfruit, papaya, mango and a slightly acetic finish. No bitterness. Medium body, dry. Fresh, dry and fruity, with a refreshing acidity. Very nice.

440ml can from the Pup & Duckling, Solihull. Poured almost black in colour with a short-lived, frothy tan head. The aroma is roasty, earthy, herbal. The flavour is moderate sweet, liquorice bitter, with a smooth, rich, oily, roasty, dark chocolate, red berry fruits, raisins, coffee, warm boozy, liquorice bitter palate. Full bodied with soft carbonation.

Bottles - one from Cornelius, one a gift from Sam. Hazy golden body with a thin white head. Steady carbonation. Patchy lacing. Aroma of orange sherbet and pineapple. Flavour of bitter lemon, juicy orange and pineapple. Medium body with a smooth texture. Light fizz. This is juicy and delicious - lovely sweet and sour vibes.

Nose is pineapple, peach, sweet citrus, mango, papaya. Taste is peach, passionfruit, pineapple, tangerine. Heavy sweet fruit flavours. Quite dry. Spicy bittersweet finish. Smooth, improves with every sip.
