Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Bottle thanks to McCash. Pours muddy purple with a thin pink-tinged head. Aromas of bramble, vanilla. Taste is more of the same. Slightly chalky.

Appearance - bright lipstick red. Thin pink lacing.
Nose - blackberries, raspberries and funk.
Taste - more blackberries and raspberries with sourness followed by a light berry sweetness.
Palate - medium bodied and tart with a persistent finish.
Overall - great stuff.

Appearance - bright purple, typical baked blueberry colour. Pink, white head.
Nose - blueberry, blackberry jam. Vanilla when you really look for it.
Taste - creamy vanilla and tart berry jam.
Palate - medium bodied, tart but creamy.
Overall - good. Creamy and tart at the same time.

Nose - juicy apricot and peach with orange shred. Funky edge.
Taste - orange shred and sour apricot again.
Palate - medium bodied, tangy sour and funk. Good linger.
