What is X?

Our Story:

To us, The X represents and is about crossing paths, coming to a juncture and ending up where you want to be.

We are a patchwork of professional brewers, and beer lovers who had too often asked ourselves, If I wasn’t doing what I am doing now, what would I be doing?

To us, life is about being where you want to be, not where you have to be.

We are a team that has put our best efforts forward to produce great clean beer, provide an unparalleled brewery experience, and contribute to the greater wellbeing of community.

A reason, a season, or a lifetime. You’ll find it at Brewery X.

12oz/355ml can from the store opposite the Pier in San Clemente ($2:99 plus tax and can deposit). Poured into an old Corsendonk stemmed tulip glass at my daughters in Laguna Hills on 6th September 2025. Clean and clear light golden body, decent white crown on top. Resinous, earthy hop aroma and taste, bitter from the start to the finish, throw back to bitter IPA's without the citrus induction.

US Pint can from a Trader Joe's, shared with a friend on 5th September 2025 at my daughters. Hazed golden orange body, white crown. More dank than vibrant and all a bit underwhelming to be honest, the two hop blending didn't do it for me, kind of cancelled each other out a little. Shame because I've enjoyed others in this series.

Imperial Pint (US Pint and 3.2oz) can in California after watching my football team beat Manchester United 12 to11 on penalties; 27th August 2025. Grimsby Town really did Slap & Tumble one of the worlds greatest football teams. Anyway the beer poured almost clear, there was a slight haze in the dull golden body, on top a white affair of bubbles. Dank and very, very hoppy, bitter throughout with a boozy citrus bite. Enjoyed the game more, but this was fine too.

US Pint can from a Trader Joe's, drank by the pool during a family BBQ at my daughters in Laguna Hills on 8th August 2025. Golden body, almost clear, short lived white crown. The name gives the game away here, it's got a citrus nose and flavour front, with a slight earthy pine undertone once you get into the beer. Neither dank nor explosive tropical fruit feel, it's a citrussy beer with a calming pine feel. Easy drinking pint, went well with the pork and rice salad.

US Pint can from a Trader Joe's, poured into a La Chouffe stemmed tulip (twice) at Sarah Janes in Laguna Hills on 2nd August 2025. Strawberry blonde in colour, fast fading pale pink head. Weak strawberry aroma and taste, didn't take to it at all.

Part of a flight (4 x 4 Fl Oz pours) in Finney's, Laguna Beach on 29th March 2025. Ruby hue to the clean dark brown body, off-white topping. Malty and semi-sweet with a Maple syrup trace or two. Good hop balance and almost interesting.
