What is X?

Our Story:

To us, The X represents and is about crossing paths, coming to a juncture and ending up where you want to be.

We are a patchwork of professional brewers, and beer lovers who had too often asked ourselves, If I wasn’t doing what I am doing now, what would I be doing?

To us, life is about being where you want to be, not where you have to be.

We are a team that has put our best efforts forward to produce great clean beer, provide an unparalleled brewery experience, and contribute to the greater wellbeing of community.

A reason, a season, or a lifetime. You’ll find it at Brewery X.

Dull gold, lots of nelson on the nose, big kiwi, pomelo, type of hops, stone fruit. Clean biscuity malt, lots of bitterness. A touch of allium but it’s mostly nelson. Decent.

On my last flight of the day (three beers), 18th April 2026; OC Local Taproom. Strange beer, opaque orange body, fast fading white head. Weird sweetness with a boozy undertone, didn't really take to it.

4oz taster from flight at Finney’s Crafthouse, San Luis Obispo, California. Nose is chocolate, cocoa, roast, and a hint of coffee. Black with a thick lacing cinnamon tan head. Flavor is only lightly sweet from the fairly syrupy body. I should have just gotten a 14 oz glass since I’d already had two of the other 4 beers 3 years ago.

12oz/355ml can from the store opposite the Pier in San Clemente ($2:99 plus tax and can deposit). Poured into an old Corsendonk stemmed tulip glass at my daughters in Laguna Hills on 6th September 2025. Clean and clear light golden body, decent white crown on top. Resinous, earthy hop aroma and taste, bitter from the start to the finish, throw back to bitter IPA's without the citrus induction.

US Pint can from a Trader Joe's, shared with a friend on 5th September 2025 at my daughters. Hazed golden orange body, white crown. More dank than vibrant and all a bit underwhelming to be honest, the two hop blending didn't do it for me, kind of cancelled each other out a little. Shame because I've enjoyed others in this series.
