After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.
We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

Cloudy amber beer. Small white head. Semi soft and semi dry palate. Semi sweet malt. Subtle fruits, mostly banana but with orange and peach. Dry finish with a pinch of spice. Not bad.

Bottle. A dense, off-white head of moderate size sits on top of a clear, golden body. Coriander, fruityness, some citrus peel and pale malts on the nose. Something reminiscent of elderflower too. It’s a bit too effervescent, medium body, quite dry. Fruityness, some coriander and citrus peel on a base of pale malt flavor. Lasting finish with citrus peel and some bitterness. A quite decent one, refreshing and easy drinkable. 120623

Cloudy amber beer. Very short white bubbly head. A little citric orange on the nose. Crisp dry palate. Fresh citric orange and dry lagerish malt. Some floral sweetness and a whisper of spice. Finishes dry. Nice flavour - refreshing.

Bouteille from Terres de Bières Paris. Hazy dark brown colour, large beige head. Full-bodied, caramel, malty, roasted malts, licorice and juniper. Complex and really nice.
