We’re proud to be one of Chicagoland’s first craft breweries, firing up our first batch of Paddy Pale Ale back in 1996.
We chose the name Wild Onion in honor of the origins of Chicago’s name. “Che-cau-gua” was the phrase the original inhabitants of the region, the Potawatomi, used to describe the wild onions that grew throughout the area’s wetlands near the shores of Lake Michigan. We loved the imagery of the early French Canadian fur traders paddling their canoes down the Chicago River, surrounded by the distinctly aromatic wild onions as they approached the “big lake”. We believed it was the perfect name for a new brewery with old ties to the city.

Draft. A- Marshmallow, mild caramel. A- Brown color, clear liquid, white head. T- Marshmallow, vanilla, slightly malty. P- Medium body, average texture, average carbonation, balanced finish. O- Lots of marshmallow and natural tasting which I super enjoyed. Lighter bodied than I expected. I mean it's still a brown ale but one I can respect.

Can. A- Almond extract, marzipan, chocolate, sweet. A- Black color, black liquid, brown head. T- Marzipan, confectioners sugar, almond extract, chocolate, coconut, sweet. P- Full body, average texture, average carbonation, sweet finish. O- This was like a bottle of almond extract. Really tasted like a cheap marzipan. Very sweet and artificial tasting. I can't help but like it, but definitely not so much almond joy flavor. The fake almond flavor just dominated everything. 5 oz would have been the perfect amount.

(can 12 fl.oz. from Americanbeer.cz online shop) Overall: Nice candy-fruity IPA, just hint of pineapple. Aroma: Sweet, candy, tropical fruits, maybe pineapple. Appearance: Clear golden. Medium, white head. Taste: Medium sweet, candy, medium bitter, citrus bite, tropical fruits, pineapple. Palate: Medium body. Long bitter finish.

12 oz. can from Orange & Brew. My can label notes the beer is 11% abv. It's stamped with a packaging date of March 11. The company description mentions that it's aged 8 months in oak bourbon barrels, but doesn't say which bourbon, so we'll suppose it's blended from several different barrel brands. The beer was a pretty solid black once poured. A very thin ring of foam disappeared almost instantly. The beer has an expected warming smell of bourbon, and that's just a part of a complex group of impressions: strawberries concentrate, upholstery leather, and some tobacco. The taste is very rich and quite mellow. It's got some sweetness, but not as much as some of the more pastry oriented big stouts. Instead, the malt is well balanced between sugar and roastiness, very well settled. This beer shows that it has been worked on continuously for some time, It invites slow sipping, but would also be a good go-with for a cheese and sausage snacks (okay, I'll say it: charcuterie). And best of all, it helps take the edge off of over a month of self-isolation.

12 oz. can from Binny's. Pours a big foamy head. Slightly hazy amber color. Citrus and pine in the nose. A good solid APA taste, with a malt backbone, a resiny hop taste. There's some mainly lemon citrus, I think, then a bit of pineapple, on top of a mainly pine resin impression.

12 ounce can from Woodman's Lakemoor, 11/30/19. Murky dark orange, large foamy off-white head, good retention. Aroma of pineapple candy, floral hops, toffee. Taste is grain, toffee, pineapple, grapefruit. Medium bodied, moderate bitterness. Like an old-school IPA with some pineapple. Decent.
