We’re proud to be one of Chicagoland’s first craft breweries, firing up our first batch of Paddy Pale Ale back in 1996.
We chose the name Wild Onion in honor of the origins of Chicago’s name. “Che-cau-gua” was the phrase the original inhabitants of the region, the Potawatomi, used to describe the wild onions that grew throughout the area’s wetlands near the shores of Lake Michigan. We loved the imagery of the early French Canadian fur traders paddling their canoes down the Chicago River, surrounded by the distinctly aromatic wild onions as they approached the “big lake”. We believed it was the perfect name for a new brewery with old ties to the city.

Can, from Potash Bros, Chicago (Oct 2023). Pours faintly cloudy dark amber-copper with a frothy off-white head, faint malt aroma, adequate carbonation, medium bitter piney caramel taste, thin body, long piney finish. Smooth and easy to drink, a typical American IPA.

12 ounce can from Binny’s River Grove, 9/26/22. Hazy orange, large off-white head, good retention. Aroma of tangerine, grapefruit, pale malt. Taste is tangerine, mango, pineapple, pale malt. Juicy. Decent.

Poured from 355mL can (pkg 05/08/19). Very dark brown, near black with small beige head. Loads of coffee on the nose. Taste is coffee, mild chocolate and bourbon. Decent, but could use a touch more body.

12oz shared with Farees @ Ryan's. Vintage 2018. Appearance: brown with a nice beige head. Aroma: bourbon, coffee, chocolate. Taste: along the same lines with a slight roasted malt bitterness. Overall: good one.

16oz can from rennat42, cheers mate. Drank on 26th January 2022 at my daughters in Laguna Hills. Deep amber body, almost mahogany, beige head. Nose is malty and marshmallow like, as is the taste (so the can doesn't lie). A bit thin body wise, but at 5.5% ABV it's not going to be rich or slick, well this isn't anyway. Interesting.

Can/Fest. A- Christmas spice. A- Gold color, clear liquid, white head. T- Christmas spice. P- Medium body, average texture, average carbonation, spiced finish. O- This was loaded down with spices. At what point to we bother with it being a white stout and just call it a spiced ale.
