We’re proud to be one of Chicagoland’s first craft breweries, firing up our first batch of Paddy Pale Ale back in 1996.

We chose the name Wild Onion in honor of the origins of Chicago’s name. “Che-cau-gua” was the phrase the original inhabitants of the region, the Potawatomi, used to describe the wild onions that grew throughout the area’s wetlands near the shores of Lake Michigan. We loved the imagery of the early French Canadian fur traders paddling their canoes down the Chicago River, surrounded by the distinctly aromatic wild onions as they approached the “big lake”. We believed it was the perfect name for a new brewery with old ties to the city.

The Sampler, Brooklyn tap: Pours light amber with a white head. Aroma is piny hops and resin hops, with a substantial malt backbone. Taste is rather bitter and hoppy, but with a big chewy malt backbone. A relatively standard DIPA, but pretty good.

Bottle at Crios. Hazy golden amber color, small off white head. Aroma of light spice and just enough goird. Taste is pretty well balanced and not over spiced.

Dirty Hazy Muddy Brown, Big Foamy White Head, Good Lacing. Mild Pumpkin Aroma. Pumpkin, Cinnamon. Watery with dry cinnamon tingly finish. Might be my first Pumpkin Ale. Interesting. Harvest / Halloween Season is upon us. There are so many Pumpkin Beer Choices in stores, that I’ll definitely try more.While I’m not really a fan of pumpkins or cinnamon, beer driven curiosity wins. Worth a Try. Plus, it is local brewer, so I need to add another place to visit on my TO DO list...

Bottle sample at a tasting at Dancing Camel. Thanks zvikar. Amber with a white head. Pleasant hops aroma with citrus, a bit of tropical fruits and floral notes. Flavor has a bit of sweetish maltiness and a finish with nice bitter citric hops. Light to medium-bodied. Simple, but nice and easy-drinking.

Sampled from a 12 oz can this beer poured a bright orange-amber color with a large creamy-soapy orange-white head that lingered and left good lacing. The aroma was strong pine, resin and caramel. The flavor was sweet and tangy pine, resin, orange and caramel. Medium length sweet pine, resin and caramel finish. Full bodied and just a touch boozy. Interesting.

Pour is a dark orange with a large white head. Aroma is burning at first then comes a slight pumpkin. Flavor is slight pumpkin and a small amount of spice. If you like some pumpkin beers but don’t like the ones that are overly spice heavy than this is for you. Pumpkin and spice but nothing over the top which I kinda prefer in these beers.

Muddy Brownish Orange Color, Small Head That dis Not Last, Leaves decent lacing. Strong Citrus, Orange, Coriander Aroma. Taste about the same: Orange, Coriander, Wheat. Sweet Orange, Wheat Sour, Watery, yet Bubbly. Nice and Easy. Good Refreshing Summer Beer. Worth A Try.

Taster at the Blarney Stone’s Solstice Fest, Oak Forest. Cloudy amber color with a fruity hop smell. Simply tastes quite full of IPA goodness, but also plenty of malts to make for a pleasing balance. Lots of pine and a bit of apricot in the hop palate.

Can thanks to Jcwattsrugger. Pours semi-clear gold with white head. Nose and taste of stale bread, barley/grain, non-acidic lemon juice and yeast. Lighter medium body.
