Description
We’re proud to be one of Chicagoland’s first craft breweries, firing up our first batch of Paddy Pale Ale back in 1996.

We chose the name Wild Onion in honor of the origins of Chicago’s name. “Che-cau-gua” was the phrase the original inhabitants of the region, the Potawatomi, used to describe the wild onions that grew throughout the area’s wetlands near the shores of Lake Michigan. We loved the imagery of the early French Canadian fur traders paddling their canoes down the Chicago River, surrounded by the distinctly aromatic wild onions as they approached the “big lake”. We believed it was the perfect name for a new brewery with old ties to the city.

Can thanks to Gary. Pours black with small tan head. The aroma is strong coconut, wood, roast, vanilla bean. Slick body, cocoa, roast, licorice, boozy finish, very good.

Can thanks to Gary. Pours a dark brown with small beige head that lasts. The aroma is roasted malt and wood. Slick body, roast, dark chocolate, oak, bourbon, nice sweetness, very nice.

Can. Pours a light straw yellow with a white head that dissipates to the edges. Aroma has straw and light sweet grains with just a hint of grass underlying. Flavor has sweet grains and straw with a bit of crisp grass backing.

12 oz bottle @ home, one off from the Bierkoning. Pitch black colour with brownish uneven head. Aroma’s of bourbon, vanilla, a bit alcohol, a hint of red fruit. Retronasal it’s bourbon, vanilla, boozy, molasses. Flavour is heavy sweet, light roasted, hint of fruity alcohol. Above medium bodied. A little bit boozy, warming alcohol but not sharp. Long finish, sweet, chocolatey and coffee-ish. Very decent!

12 ounce can. Cloudy orange gold color. Large foamy white head. Very nice lacing. Caramel malt nose. Fragrant pine hops as well. Sweet toasted malt flavor is balanced by the subtle spicy pine hops. Softly carbonated. Decent IPA, but more like a hoppy pale ale.

12 ounce can. Bright yellow gold color. Volumeous rocky white head. Grainy malt nose has a lemony accent. Sweet citrusy malt flavor is light and refreshing. Some crisp grassy hop flavor in finish. Overall, a nice smooth pilsener that goes down easy.

Pour is a clear golden with a huge white head. Aroma is a nice hop scent with a bit of bready pils malt. Flavor is kind of a let down after the nice hoppy aroma. Kind of a basic lager malt with little to no aftertaste. It was cold and clean on a hot summer day, that’s about the best thing to say about this beer.
