The Craft Academy helps craft new talent and unbottle potential by giving young people the chance to earn while they learn about brewing, design, marketing and sales. With the help of experienced mentors, the 18 month course teaches participants industry-specific skills as they work towards a bespoke apprenticeship qualification, all while creating beers under the Craft Academy brand and bringing them to market.

The Florence has a long history of being a brew pub. Formally the home of Head in the Hat brewery; a heritage brewery that proudly called us their home until 2015. Continuing this rich history we are proud to welcome Craft Academy as our new in house brewing team.

T42 Bottleshare. Clear deep amber beer, small pale tan head. Palate is smooth and semi dry, decent fine carbonation. Softish malts, mild dark chocolate and a little cream. Tangy fruits. Smooth light pine and a little hop skunk. Light finish. Decent and certainly better than expected.

Bottle shared in London - thanks to Kenny. Pours clear golden-brown with a creamy, off-white head. A little English yeast in the nose, cocoa, orange. Medium sweet flavour with burnt toast, cocoa, ripe orange, pine, a little earth. Medium bodied with fine to average carbonation. Pretty good balance to finish, more English yeast, dry cocoa, a little earth. Drinks good enough.

Bottle shared on Level 42 12/01/2016. Many thanks to Ken for this one. Clear amber brown coloured pour with a a lose off white head. Aroma is sweet malts, toffee, piney, woody, toffee. Flavour is composed of OS tangy lemon, woody citrus, toasted malts. Pine. Palate is semi sweet, moderate carbonation, semi dry finish. Ok. Not terrible.

Bottle at level 42. Thanks to Ken.... It pours clear deep brown with a medium beige head. The aroma is soft, sweet, sticky, chewy, cheap chocolate, chewy, mocha, candy and dirt. The taste is slick, bitter - sweet, charred, roasted malt, plain, chewy, chocolate brownie, earth, mild astringency and wood with a dry finish. Medium body and fine carbonation. Not as bad as expected. Fair.

Bottle split at Happy New Years L42 Shim Sham, thanks to Kenny, 12/01/17. Rich mahogany brown with a well appointed beige cap. Nose is pine resin, cocoa powder, charr, brown bread, toffee, light spice. Taste comprises toffee, charr, light roast, cocoa powder, red berry fruit tang. Medium bodied, fine carbonation, semi drying close dashed with earthy hop bitterness. Ok stuff ... ticks the style boxes but not one to rush back for.
