Bottle pour at NC Cider Fest. Clear, pale, gold, intentional still. Spiced, pie nose. Very hard to tell this from the apple spice. Waxy, fennel, very similar delicate spice to the cyser, but the honey is more citrusy. Still has that apple acidity, but the vender says there's nothing but pumpkin, spice & orange blossom honey. Good.

Bottle pours at NC Cider Fest. Clear, medium gold, watery pour. Waxy, beautifully floral & veggy(in a good way). Earthy, lovely mellow spice profile that lets the incredible floral honey & tart apple though. Not quite viscous, but it carries some weight. Really, really good.

Bottle pours at NC Cider Fest. Clear, pale gold. Sweet, floral, concentrated dessert apple, very neat cocktail nose. Lovely, sweeter than usual rye. Semi sweet, decent acid, light lemon, lingering spring honey, creamy texture. Lovely & delicate.

Corked 375 mL bottle from Botanist and Barrel Asheville Downtown, 7/8/23. Dark purple, no head. Aroma of grape, currant, honey. Taste is grape, currant, honey, currant skins. Well balanced. Bright and dark at the same time. Nice. 2nd new NC meadery.
