Phil learned how to craft cider in Zummerset. Oo-arr. But he’s come a long way since then. All the way to Berwick-upon-Tweed, in fact, where Northumberland meets Scotland. Tucked away on farms and estates around the Borders he found orchards producing fruit that’s perfect for ciders of character.

BIAB at Bodega, Newcastle. Orange golden colour, thin bubbly rim and aroma of kiwi, lime, apple, cats pee. Taste is sweet, apple, kiwi fruit, lime, with some cardboardy notes. Medium bodied, low carbonation, sweet finish. OK

BIAB at Fram Ferment, Durham. Hazy orange gold colour, bubbly rim and aroma of passionfruit, fruity, apple. Taste is sweet, apple, biscuity, with tinned passionfruit and drying acidity. Medium bodied, low carbonation, drying finish. OK, abit sweet

5/10/2022. BIAB shared by SHIG, cheers. Pours just slightly hazy pale amber with a small bubbly white head. Aroma is oaky, vanilla, woody, caramel, funky, coconut edge. Medium sweetness and light tartness. Medium body, slightly oily, low carbonation. Sweet, woody and dry finish. Well done.

1/9/2022. BIAB serving shared by danlo, cheers Ed. Pours slightly hazy dark golden orange with minimal head. Aroma is sweet passion fruit, pineapple cubes, peach, flowers, caramel, slightly dusty edge. Medium to heavy sweetness, light bitterness, touch tart. Moderate body, slightly watery, low carbonation. Nice aroma, pretty decent overall, just lacked a bit of body.

Pandaaaa courtesy of SHIG. Misty dark red-amber body, traces of a head. Enormous juicy-jammy passion fruit and peach aroma, lovely! Lean, soft taste, peachy, some passion fruit. Lightly appley by the finish, ending dry. Sweetish, dry, lightly astringent but in a pleasant way. Good stuff, overwhelmingly tropical-stonefruity but not bad.
