Phil learned how to craft cider in Zummerset. Oo-arr. But he’s come a long way since then. All the way to Berwick-upon-Tweed, in fact, where Northumberland meets Scotland. Tucked away on farms and estates around the Borders he found orchards producing fruit that’s perfect for ciders of character.

Draught at Split Chimp, Newcastle. Orangey amber gold colour, thin white head and aroma of grapefruit, apple. Taste is tangy, apple, pink grapefruit, some funk and tannin. Medium bodied, low carbonation, medium drying finish. Quite drinkable

Sample courtesy of SHIG, cheers Shawn! Orange amber colour, bubbly white foam head and aroma of apple, oak, vanilla, lactic, some funk. Taste is tangy, apple, woody, oaky, formic notes, funky, barrel notes, with red wine notes and some tannin. Medium bodied, low carbonation, dry tannic red-wine like finish. Nicely drinkable.

Panda 🐼 at home thanks to SHIG. A mostly clear toffee orange coloured pour with sdmall halo of off white head. Aroma is toffee apple, lacto funk, green apple, vanilla, toffee. Flavour is semi sweet, toffee apple, woody funk, mouldy, wooden caske, madeira wine, funky barrel character. Palate is semi sweet, light tang, mellow carbonation. ok. Nice barrel funk.

Panda at home, thanks to SHIG, 27/06/22. Deep copper to golden with a fast collapsing white head. Nose is dusty apples, light whisky barrel, hedgerow, apple skin, vinous trace, oak. Taste comprises tarte apples, oak, barrel tones, earthy apple core, light funk, tannins. Medium bodied, moderate carbonation, light drying close. Solid complex cider.

Bag: Poured a burnt orange with bubble head. Aroma is boozy, woodsy, oak, fruity, apple, yeast, vanilla. Taste is vanilla, apple, tannins, woodsy, boozy, oaky, tingle finish.

Panda 🐼 at home thanks to Shig. A light hazzed bright orange coloured pour with a loose halo of white head. Aroma is medium sweet, gib fruit, jammy five alive, orange juice, mango, tangerine, peach melba. Flavour is composed of semi sweet, juicy fruits, apple peach, pineapple tang, pithy apple, Palate is semi sweet, rounded, light tang, mealy, moderate carbonation. Easy drinker.

BIAB at Darlington Snooker Club Beer Festival May 2022. Bright red colour, no head and aroma of mucky funk. Taste is sweet, raspberry, sherbert, zesty, some apple, tart. Medium bodied, low carbonation, dry raspberry finish. Quite drinkable
