Blend of two grape ales, one with Riesling and the other with Pinot Noir, from a new and interesting Danish craft brewery I was not yet familiar with, and which was apparently started by the former head brewer of Mikkeller's Baghaven, a brewery I visited myself and cherish fond memories of. Thanks Janos, Dok's head brewer, for sharing this bottle! Snow white, open, thin ring of mousse on a misty orange-glowing amber beer with salmon-pinkish tinge. Aroma of grape skins and sour grapes rather than actual ripe Riesling or Pinot Noir, lots of old wood, rhubarb, dry earth, green gooseberries, lingonberries, dry and old rosΓ© wine, redcurrant. Tart onset, gooseberries, green apples and rhubarb alongside sour grapes, quite sharply sour but in an admittedly elegant, fruity way; medium carb, vinous core of a bready soil pierced by strong lactic and fruity sourness, grape skin and wood tannins and some lingering ripe lingonberry sweetishness doubtlessly coming from the grapes. Woody, sour, drying finish, but with a lot of vivid grape fruitiness - though perhaps more actual ripe grape sweetness and juiciness could have 'upholstered' it a bit, if you see what I mean. Nevertheless, Baghaven's influence, or better put: the skills of the guy that worked there, clearly show off in this one. I hope to encounter more of these Insight Cellars sours this year!
