Description
The main aim of Our Brewery is the fermentation project using historical techniques, quality ingredients and a natural influence from the environment in which we are based. The beers we create at Our Brewery require significant time and patience to develop and evolve. We have made some fresh beers in the range of pressurised stainless steel cylindrical-conical fermenters we have on-site, but that is simply to cover overheads.

We are incredibly interested in various methods of fermentation. We are experimenting with spontaneous fermentation, wild yeasts and ageing our beers. This is where our foeders and barrels come in. We have three foeders and over 30 barrels used to age some unique beers. This is a waiting game; it can take a few years to get results.

440ml can at home. Pours deep brown with a hint of mahogany red, very thin tan head. Nose is brown bread, milk chocolate, nut mix, some caramel and toffee notes. Flavour is malt chocolate, nutty and caramel sweetness. Sweet finish

14/12/2024. Can shared by Colin, cheers. Pours clear dark mahogany brown with a small beige head. Aroma is sweet toffee, coffee, oaty, lightly roasted, chocolate, dark fruits. Medium sweetness, light roasted bitterness, very slight tart fruity edge. Medium body, smooth, average to soft carbonation. Nicely done.

Can at Mum and Dads in Newry, from Craft Central Dublin, 15/11/24. Mahogany brown topped with a good sized khaki head that dissipates to a swirl over time. Nose is chocolate, toffee, light spice, cocoa powder, raisins, dried fruit esters. Taste comprises chocolate biscuit, toffee, brown road, mellow roast, ashen tones, charr, dried fruit rinds. Medium bodied, fine carbonation, light drying close. Tasty enough stout.

Bottle at the Sunflower, Belfast, 15/11/2024.
Deep chestnut brown with a reddish hue and topped with a lasting off white head.
Nose is stewed fruit esters, vinous, acidic nostril pinch, dried red berries, herb.
Taste comprises damp oak, vinous, acidic spike, stewed fruits, balanced wine barrel, dry rot, hedgerow.
Medium bodied, light spritzy carbonation, drying close with a balanced puckering bite.
Solid complex sour.

Ruby black with a short tan head. Aroma of licorice malt. Flavour is oats roast malt, dark berries on a soft jam base. Bitter roast finish.
