Description
The main aim of Our Brewery is the fermentation project using historical techniques, quality ingredients and a natural influence from the environment in which we are based. The beers we create at Our Brewery require significant time and patience to develop and evolve. We have made some fresh beers in the range of pressurised stainless steel cylindrical-conical fermenters we have on-site, but that is simply to cover overheads.
We are incredibly interested in various methods of fermentation. We are experimenting with spontaneous fermentation, wild yeasts and ageing our beers. This is where our foeders and barrels come in. We have three foeders and over 30 barrels used to age some unique beers. This is a waiting game; it can take a few years to get results.

440ml can from Sipster, Newtownabbey. Pours a slightly unclear piss yellow thin white ring circling the glass. How I feel is that this is a pretty poor witbier, bad yeast strain, no spice, no floral notes, watery just very lacklustre in every aspect, poured half if it away.

Medium to dark brown. A bit simple and on the meh side. Earthy, a bit of chocolate, some oat toasted notes. Thin and a bit watery. Not a great option. Lacks intrigue and complexity but also just isn’t all that tasty.

Sample, thanks Robin Svensson! Clear mahogany colour, small head. Toasty nose with some dark berries. Mid sweet with medium body and clean, rounded mouthfeel. Toast, grahams crackers and dark berries. Mid bitter finish.
