Description
Cidermaking is a playground of the pretty and the ugly, the bitter and the sweet: It’s never a one-note song when done well. Our apples reflect the striking, complex terroir of Washington’s apple country — from juicy dessert fruit to biting, spirited cider varieties. Simply put, apples contain contradictions. And it’s when we follow their every wild and quiet possibility, and seek out juxtapositions of flavor, that we find our most delicious end result.

On tap at Bale Breaker - Ballard, pours a clear blonde with a small white head. Aroma brings out gentle, crisp apple skins; not a whole lot else. Flavour is low-to-medium sweet, with crisp apple skins, maybe a touch of wild stuff. Carbonation is above average and fittingly so. The nose seemed underwhelming but the palate is solid. Good stuff.

On tap at Bale Breaker - Ballard, pours a clear pale golden with a small white head. Aroma brings out gentle toffee apple, medium sweetness, and light acidity. Flavour is clean, with low-to-medium sweetness, gentle tannins, and light acidity. Nicely constructed and has some nice subtle complexities. Solid.

On tap at Bale Breaker - Ballard, pours a clear copper amber with a small white head. Aroma is fairly fruity, with light-to-medium apple sweetness, and a bit of treacle. Flavour is much drier than the nose suggests, with a sort of dry buttery character and some toffee apple. Not exactly reminiscent of a French cider in that there's no farmhouse character, but it does not have some dryness and depth. Good.

On tap at Bale Breaker - Ballard, pours a clear reddish/pinkish amber with a small off-white head. Aroma is very fruity and cocktail-like, with orange zest, light cranberry and booze. Flavour is full of bitter orange zest upfront, followed by cranberry and some cocktail-like booziness. Not my thing, but I must admit they've hit the nail on the head with this. Solid enough.

On tap at Bale Breaker - Ballard, pours a clear pale blonde with a tiny white head. Aroma is gently oaky, with crisp apple skins and a hint of vinous character. Flavour is somewhat buttery—Chardonnay like, not diacetyl—with oak, some vinous notes, crisp apple skins, and gentle acidity. Interesting concoction; quite a lot more complex than your standard cider. Very good.

On tap at Bale Breaker - Ballard, pours a clear ros� colour with a tiny white head. Aroma brings out lots of ros� floral notes, moderate sweetness, and crisp apple skins. Flavour reveals lots of apple core, complex ros� wine-like notes, crisp apple skins, and gentle acidity. Really quite a lot of complexity here. Love that ros� character. Excellent.
