Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

An almost clear deep golden beer with a white lacing. Aroma of herbs, red fruits, brett. Taste of sour cherries, red grapes, brett, dry sour finish.

Light purple color. Tart plum, dry oak, but did there is not enough sweetness in this beer and it’s not tart Enough o have balance. This didn’t do much for me

Very cloudy purple beautiful plum, beautiful fruit character, light body excellent funky yeast, nice light oak character. Super well balanced. Perfectly balanced.

Cloudy white golden color. Super funky nose with excellent wild yeast, apples, apple skins, barnyard, very tart and sour. Very light good acidity and band aid. Superbly balance. One of the best beer ciders I’ve ever had.

Light golden white pale color. Big musty white grape, stems, light oak, very sour. Very rustic, very tart, medium oak, tons of grape skins. . Light body, not overly tart but great depth. The white wine character just lingers. Superb

Goblet at Be Hoppy Madrid.  Lightly hazy yellow with a huge cap of head that settled to a nice lace.  Nose is well balanced, lemon juice, grapefruit rind, light grist.  Some green hop.  Flavor is well balanced.  Grist and straw, lemon, some peppery notes.  Yeast really shines.  Very rustic.  Medium bodied, light tartness.  8 7.5 7.5 8 8

Frothy white fair mostly diminishing head. Dark yellow colour. Light malty and hoppy acetic aroma. Light bitter acetic flavor. Average light bitter finsh. Oily palate.
