About
Housed beneath The Rat and Ratchet and since the very first brew of Lab Rat in 2011, head brewer, Paul Spencer and brewer Robin Moss, have created rodent themed beers to critical acclaim. Our beers are distinctive, extreme, generally intensely hopped and anything but average, experimenting with a range of different beer styles, strengths and ingredients. Rat beer is now infecting all four corners of the UK faster than the Black Death, turning a local infestation into a national plague. White Rat in particular has emerged as the flagship beer and now sits within the Ossett core range.

Cask, handpull at The Dispensary, Liverpool. It pours darkest brown wto black with a tick, dense light tan head. The aroma is rich roasted malt, dark roast coffee, chocolate cake, peppery spice, charcoal and Mars bar. The taste is dry, chewy, rich roasted malt, liquorice, umami, charred wood, bitter chocolate, peppery spice, warming alcohol, tannin, charcoal and burnt toffee with a slick, roasted finihs. Full body and fine, foamy carbonation. Robust stuff. Pleasant.

Cask at The Dispensary, Liverpool. It pours clear deep golden with a thick, foamy white head. The aroma is sweet dessicated coconut, herbal, aniseed and tapioca. The taste is firmly dry, hight level of bitterness, coconut, tropical vibes, pithy, zesty citrus, floral, straw and herbal accents. Medium body and fine, foamy carbonation. Not sure the balance is quite there. A bit raw perhaps, but it's OK.
