Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

473ml can. Pours a clear gold with a medium, foamy, long lasting, off-white head that leaves soapy curtains of lace. Mild aroma of biscuity pale malt, grapefruit peel and herbal hops. Sweet fruity flavour of biscuity pale malt, peach, mango, grapefruit and piney hops in a crisp, dry, bitter finish. Light to medium body with an oily texture and average carbonation. Refreshing and easy to drink.

473ml can. Pours a clear gold-amber with a medium, foamy, long lasting, off-white head that leaves soapy curtains of lace. Mild, sweet aroma of caramel malt, orange, pineapple and floral hops. Sweet flavour of caramel malt, orange, peach, pineapple, pine, light alcohol and spicy hops in a dry, mild bitter finish. Medium body with a smooth, oily texture and average carbonation. Solid, but nothing special.

473ml can. Pours a hazy yellow-gold with a medium, foamy, long lasting, off-white head that leaves thick curtains of lace. Sweet fruity aroma of bready wheat malt, pineapple, tangerine, mango, papaya and floral hops. Sweet fruity flavour of bready wheat malt, mango, papaya, pineapple, oats and floral hops in a dry, mild bitter finish. Medium body with a thick, creamy, soft texture and soft carbonation. Juicy and tropical. ABV is well hidden.

Sweet fruity flavour of crackery pale malt, blood orange, passion fruit, corn and floral hops in a dry, mild bitter finish. Light body with a watery texture and average carbonation. A tasty, clean, easy drinking lager. Would be great for summer.

Sweet, spicy flavour of caramel malt, pear, apple, peach, Belgian yeast, honey, bubble gum, clove and floral hops in a dry, warming booze finish. Medium to full body with a smooth, oily texture and average carbonation. Tasty and not as boozy as I thought.

473ml can. Pours a slightly hazy orange-copper with a medium, foamy, long lasting, off-white head that leaves soapy curtains of lace. Semi-sweet aroma of biscuit malt, caramel and weedy hops. Sweet flavour of biscuit malt, caramel, orange rind, floral and spicy hops in a crisp, dry, bitter finish. Light to medium body with a smooth, almost creamy texture and average carbonation. Well balanced and enjoyable.
