IMG_0063-300x293Over a period of nine months and with a lot of hard work, John and his father Geoffrey converted the handsome water tower, in which the brewery is now based.
Steeped in brewing history and known as Walsitch Maltings, the tower was built in the 1870s by Thomas Salt & Co Ltd., and later in 1927 owned by Burton brewers Bass & Co.
With the conversion finished and the building returned to its former heritage, production began on 10th April 2001.

[i] [b] Cask, gravity at the Kings Arms Beer Festival, Kidlington, Oxon 28-03-08 [/i] [/b] Pours amber with very good clarity, bit too sweet at times, orange blossom, hops are a constant presence, aromatic tangy and with a lasting bitterness.

Cask gravity at Planet Thanet BF 08. Hazy copper with lasting beige head. Diacetyl. I really don’t like this and had to pour it away.

Cask @ Wenlock arms. Pours a clear dark amber color with an off-white head. Roasted malty chocolate aroma. Roasted malty chocolate flavor. Has a sweet malty chocolate finish.

Cask at The General Elliot, South Hinksey, Oxon, 18-06-07. Pours dark brown with white frothy head. There was a tiny hint of sourness at the start but this soon developed into quite a sweet malty beer, I agree with Richard as much as I liked it and it was fine it did come across as a bit watery.

Cask gravity at Rare Breeds BF 06. Peachy fruit, reminds me of a Belgian strong gold ale. Good in mouth, nice sweetish bit and then good hops on end. Pear drop fruit. Lovely actually.

Cask at Market Porter London SE1 29 Apr 06. Brown. Almost no head. Unclear. Caramellish aroma rapidly changing to a bitter aftertaste.

Cask gravity at Reading BF 06. Gold, thin white head. Simple, plain golden bitter. Citrus is nice, hop finish is nice too. Fine.

Cask gravity at Reading BF 06. Copper colour. Weird chemical/acetone aroma. Bit of toffee. Better in mouth than aroma, but still odd.

Cask handpull at Red Lion, Isleworth. Pale copper with sparse white head. Fairly standard British bitter, slightly more bitter than most. Fruit is quite good with white fruit flavours. Nice bitterness, sweet malt toffee.

Cask gravity at Battersea Beer Festival 2006. Reddish brown with no head. Thinnish aroma, but quite a nice mild, bit acidic, but goodish burnt malt and a nice finish. Surprisingly enjoyable.
