Corked 37.5cl bottle at Papsø’s
Hazy deep blond color. Although the French often use buckwheat honey for Mead, this one has the most evident aroma of buckwheat, and honey; breadish, rustic, but very interesting. Very sweet, but not syrupy; and the sweetness is cut by the strong alcohol feeling; in the front there is also some light acidity and very light carbonation; the honey flavor is clear, as evident are, once again, its roots; there is a very light bitterness in the final, that in a buckwheat Mead doesn’t disturb as in other more floral ones; and the alcohol warms the mouth. Nice, sharp, peculiar.

Corked 37.5cl bottle at Papsø’s
Blond color with faded copper and pink shades. Very strong smell of sewage water; followed by light aroma of fruits and Band Aid-like chemicals. Semi-sweet flavor with an immediate alcohol presence; mild honey flavor with light fruity touch; in the final the alcohol is too evident, burning, there are light traces of chemicals, and some astringency on the gums.
It’s not a bad idea, but it has been pushed a bit too far.

Bottled. A hazy golden mead. The aroma has notes of honey and sppices. The flavor is sweet with strong notes of alcohol, wax, and honey, as well as some spices, leading to a dry honey finish. The alcohol burns the tongue.

Bottled. A dark golden mead. The aroma has notes of alcohol, honey, spices, and grapes. The flavor is sweet with an acidic edge and notes of honey, wood, spices, and alcohol, leading to a tart and sweet finish. The alcohol burns the tongue.

clear red/orange , no head. quite flowery aroma, also loads of honey, flavor is honey, flowers, red berries sweet, quite complex for a mead. bitter vieous notes.

Bottle 37,5 cl. Courtesy of TheCheeseMan. Pours a pale pink - yeah, pale pink it is. Quite some sweet cherry up there in the nose - honey not so much. Rich body, slightly sparkling, some berry sweetness but also a solvent tang. Strangely it ends pretty bitter. 250311

Bottle 37,5 cl. Courtesy of TheCheeseMan. Pours an almost clear golden with tiny, tiny bubbles. Interesting aroma of flowers, honey and...a little barnyard. Solid body, sweet honey, again flowers. The finish is a little boozy and even slightly bitter. 250311
