Today David Sheppy the incumbent Master of Cider, applies his unrivalled knowledge and expertise from a lifetime of cider making to turn our home-grown apples into some of the finest and award winning ciders.
Fifteen of our 90 acres of orchards we planted with tradition standard apple trees. Eight acres of these are certified organic. The remaining 75 acres contain bush trees planted at between 200 and 300 trees per acre, so about 19,000 trees in total at Sheppy's.

500ml bottle as part of a delivery from Chiltern Brewery and drunk at home. Light gold, clear. Apples, light vinaigrette in the aroma. Sweet taste with a fruity sourness coming in almost immediately. Gentle body with carbonation on the heavy side. A bit confused but nice enough.

500ml bottle bought as part of a delivery from Chiltern Brewery and drunk at home. Bright light gold, clear, no head. Light apple aroma with an almost plastic note. Sweet taste, too sweet for my liking but not sickly. Drinks like a soft drink, sweet without any biteback. Light body with light to medium carbonation. A little insipid but still enjoyable.

500 ml bottle. Clear golden. Apple juice, young sweet white wine, funk, basement notes, apple peel, some lemon. Fruity sweetness, some dry sourness. Full to medium bodied, oily texture, low carbonated, dry fruity sweet finish. Very good cider indeed, not the biggest fan of sweet ciders, but this one is very well made.

0.5 l bottle from 'Bierwinkelier.nl', as 'Sheppy's 2021 Vintage Reserve Cider (Oak Aged). Clear, golden with a few white bubbles on top of it. Sweetish, slightly sourish, gently fruity and a little funky aroma of ripe apple, walnut, some oak and traces of sulfur. Quite sweet, minimally sourish, gently woody and rather fruity taste of ripe apple, oak, some walnut and hints of honey, followed by a short, gently woody-dry finish. Medium body, minimally astringent and slightly effervescent mouthfeel, very soft carbonation. Pleasant cider, refreshing and moreish at the same time.

Brown 500ml bottle shared with Mike (my cider drinking friend from Somerset) at my place on 4th October 2024. Thought this was fine, good strength and thirst quenching.

From bottle at MB2 08.09.24. Clear golden. Fine aroma and taste of red apple peel, leather, sweet apples and toffee. Slightly tart and astringent mouthfeel. Good, with fine and lingering aftertaste.

YG 070824. Golden color with some white bubbles. Aroma is apple, apple core. Flavor is apple, apple core, grass, lemon. OK.

500ml bottle shared with my son on 22nd August 2024. Drank in front of the TV before Grimsby lost 4-1 at Notts County! Apples, it tastes of apples, not sour grapes like we had later.
