Ons verhaal moet wel beginnen bij de orde der Dominicanen in Zwolle. Want dankzij deze orde is het mogelijk geworden om ons ideaal van een eigen brouwerij te realiseren. Het allereerste, en enig echte Zwolse kloosterbier: Axes Castellum.

Bottle from Stanislaus Brewskovitch, Zwolle. Ugly murky looking beer. Spicy and yeasty aroma with coriander, sweet malt, sugary notes, pear, and a touch of vegetable-ish DMS. Flavour is above medium sweet, alcohol is well-hidden. Body is medium. It's a shame about the DMS, it's hard to get past that.

Bottle from Stanislaus Brewskovitch, Zwolle. Aroma is yeasty and fruity with wheat, citrus, soft spicy notes, and a relatively mild touch of banana. Flavour is moderate sweet and light bitter. Body is medium. Surprisingly good Weizen.

Bottle from Stanislaus Brewskovitch, Zwolle. Aroma is malt, caramel, somewhat estery yeast, hint of dried fruits, with herbal and spicy notes. Flavour is medium sweet and mildly bitter, body is medium. Decent if unremarkable Belgian (dark) Ale, but not a Saison by any stretch of the imagination.

Bottle from Mitra Assendorp, Zwolle. Aroma is roasted malt with dark chocolate, coffee, touch of mocha, lightly caramel, some liquorice in the finish. Quite a bitter flavour with a mild sweetness and a fairly dry finish. Body is medium. Not very Imperial, but taken as a 'regular' Stout, it's nice. Bitterness is a bit much though.

Bottle from Mitra Assendorp, Zwolle. Rich brown malts with spicy yeast, caramel, light toasty/roasted with notes of clove, light dried fruit. Caramel malt and yeast in the finish. Medium sweet, not boozy. A rounded, pleasant Quad.
