The story begins in college and continues until today with the opening of the O'Clock Brewing brewery... Between there were those years when the trio brewed for fun in the parents' garage equipped with the bare minimum and then there were also these trips to several producing countries, particularly in Northern Europe, motivated by their love of the fermented drink.
These three bearded friends and keen on good beers opened their brewery in the industrial zone of La Croix-Bonnet in Bois d'Arcy. The flavors are imagined by Kévin, with five years of experience as a brewer. The three friends want to move away from the French model and offer different beers.

It is a really pleasant IPA, rich and tasty, note of hop, resines notes, malt, sugar, good bitterness and perfect with friends, 13.02.17, at Lausanne, Prélaz.

It is a classical black IPA, easy to drink for the beginners, bitter, some roasted malt, a bit watery, pleasant black body, good brewery, 09.07.17, at Lausanne, Prélaz buying it at bootlegger, Paris.

Bue à La Petite Dernière, à Paris. Robe blonde dorée limpide, surmontée d’une large mousse blanc cassé, persistante. Nez éclatant de houblons résineux, avec une belle fraîcheur sur le pin et une base maltée biscuitée en soutien. En bouche, l’attaque est franche : houblon vif, résine légère, biscuit. L’amertume est nette, bien intégrée, avec une profondeur aromatique remarquable. Un ensemble propre, droit, bien exécuté. Très chouette IPA !

Can from V and B Nanterre.
A: clear pale golden, thin, white head.
A: grape, melon, pine, shallot, bread crust.
T: sweetish melon, unripe pear, bitter grapefruit, grapes.
F: piney hops, bitter grapefruit, grass.
P: medium body, slick texture, soft carbonation.
Okay, bit flat perhaps, feels like a Belgian IPA.

Dark chocolate and whisky aroma. Taste is a bit of whisky, a bit of sweet roasted malt, and a bit a dry bitterness.

Bitter hops, pine, and tropical fruits aroma. Juicy, taste is in tropical fruits, a hint of grass and bitterness. Mid-dry finish.

Bière dégustée en pression. Robe dorée trouble, mousse fine, peu persistante. Nez fruité très agréable, sur les agrumes mûrs et une pointe de mangue. En bouche, l’attaque est douce, veloutée, bien fruitée. L’amertume monte vite en puissance mais reste maîtrisée, bien intégrée. Finale légèrement sèche, avec une belle persistance houblonnée. À 8 %, on aimerait un peu plus de corps pour soutenir l’ensemble, mais ça reste très plaisant et bien construit.

On tap at Carburant, pours black with a small tan head. Aroma is full of rich coffee, bourbon barrels, and a sturdy toasted malt base. Flavour is boozier than expected, with perfumey bourbon upfront, followed by coffee, booze, and toasted malt. Boozy and a bit messy. This one seems all over the place. Okay.

On tap at La Fine Mousse, pours black with a small tan head. Aroma is full of lush rum barrels, moderate roast, and a touch of cocoa. Flavour is complex, with beautiful rum barrels, cocoa, and toasted malt in wonderful cohesion. Ridiculously fine base beer and beautifully barrel-aged. Excellent.

On tap at Hoppy Corner, pours black with a small tan head. Aroma has soft toasted malt and some earthiness. Flavour is weak and watery, with thin toasted malt, some earthiness, and stale bread. Somewhat metallic on the finish. Not so good.
